jazzing up egg mayonaise

    Boil your eggs and mash with butter, salt and pepper to taste. Spread onto bread and enjoy :drool:


    ETA: I know it's not egg mayo, but once you've tried that you'll never eat egg mayo again :p

    One of my sisters (2 years younger than me) has ALWAYS been the family 'food experimenter' whereas I was useless until after I got married.

    In the school holidays (1965 when she was 12), she concocted a sandwich filling which was the above with added grated cheese - in our homes this is forever known as 'Sue's Mixture' and still goes down a real treat at EVERY family buffet that we do :j.

    It can also be added to cold cooked pasta for a pasta salad and served with lettuce, cucumber and tomatoes for quick lunch.
  • Add some chopped spring onions to the egg mayo.

    My seven year old DD is the self proclaimed expert on egg mayo sandwiches in our house. She says there is a world of difference between egg and mayonnaise sandwiches (spread the bread with mayo, lay sliced hard boiled egg on top) and egg mayonnaise sandwiches (where you mash up the egg with mayonnaise and spread on the bread).

    So there...now you know, lol.

    I don't butter the bread when using mayo on or in sandwiches...there's plenty of moist filling in there and who needs the extra calories? I am sometimes allowed to add lettuce or tomato or both to egg and mayo sandwiches, btw. In egg mayonnaise sandwiches it's cress or nothing!

    I prefer egg and salad cream sandwiches, while the eggs are still hot.

    I never butter the bread, just the egg/salad cream mix plonked generously onto the bread.

    The best egg mayo sarnie ever was from a local deli counter and they add grated cheese to their mashed egg too. It really, really works!

    I sometimes add grated cheese too - but didnt mention it as the OP didnt put it in as being 'in stock' - but - it makes a great sarnie. i also do very similar thing with cream cheese only leaving out the eggs!!!
