I used to work in a sandwich shop and we always added english mustard to the egg mayo it improves the flavor honest0

I like to make mine with the addition of some ground pepper and grainy mustard.:D0

I prefer to make mine with scrambled eggs - that way you dont just get chunks of white! And yes, I do them in the microwave! then I use Hellmans and a good squirt of salad cream, salt and pepper. chives are nice but if I dont have any then some chopped spring onion tops will do.0

Completely out of curiousity... I wondered, how do you make your egg mayo for sandwich?
My OH just told me I am weird because I grate my egg.. few strokes on a grater and you have perfecly even grated egg, easy to mix and spread. He chops it on a board, my friend also does that and another mushes it with a fork..
I never done it differently as that is how I was taught to do it. Also shop bought sandwiches look like done on massive grater.
How do you do yours?0 -
I'm in the 'mush with a fork' camp. I confess it had never occurred to me to try grating an egg - as it's so soft, don't you end up grating your fingers as well? Or am I just hopelessly clumsy with graters?Back after a very long break!0

I use an egg slice, do it one way, turn half way, then the other and i have thin strips of egg, yummy, i am now going to make some for our sandwiches tomorrow, i add mayo and a little salad cream0
