    I'd heard you can freeze sandwiches but never really thought it would work, it was a revelation to find that it did! Great way to make lunches in advance and never end up with nothing to eat at work.

    I very rarely eat sandwiches, so I'm on the lookout for interesting and tasty sandwiches that I can freeze. I eat pretty much everything.

    i often freeze sandwiches I make up a whole loaf and freeze in sandwich bags, I usually write the filling on the bag as one son will not eat alot - i have frozen the following on their own or in combinations

    Cheese with or without pickle
    Ham with or without pickle
    Prawn/mayo (not if the prawns have been previously frozen)
    Roast beef and horse radish
    Smoked salmon (again not previously frozen)
    Bacon
    sausage - the last two can be warmed in a microwave
    turkey and cranberry sauce
    pork, stuffing and apple sauce
    Gammon and apricot

    I am sure there are more just can't think at the moment

    Oh my goodness I am a strong believer that everything (well almost) can be frozen but I would never ever have thought of freezing sarnies :o
    Cant wait to try it out now :D

    Do watch how you defrost them though. For years I took a pack of sarnies from the fridge and let them defrost at work - until a few months before I retired I got a bad dose of food poisoning and the only thing OH hadn't eaten was the sandwich!

    I was doubly upset as it saved loads of time in the morning so I ended up buying sandwiches after that at a cost I thought was extortionate.

    Great post no.1swimmum, gave me some great ideas.

    One question - where do you buy prawns that haven't already been frozen? Sounds stupid but most "fresh / chilled" supermarket prawns have already been frozen so that counts them out.

    On the same subject, I have often been in Tesco / Asda and purchased a shelf full of pre-packed sandwiches for 20p a throw and thrown them all in the freezer (even with lettuce / salad on some)... the lettuce won't look appealing defrosted but sometimes I ate it and sometimes I just picked it off - either way I haven't died yet.

    Also when they used to hold meetings at work over lunch and had buffets, I often raided the left over sandwiches and took trays and trays of sarnies destined for the bin home to freeze.

    Tuna mayonaise, with or without sweetcorn.
    Chicken mayo, sweetcorn
    Any sort of cheese
    Any sort of sliced meat
    Crumbled bacon with chicken etc in mayo.

    Salad ingredients don't freeze well in sarnies. Makes them soggy. Boiled eggs don't freeze well either so no egg mayo.

    You don't need to just use sliced bread in frozen sandwiches btw. Rolls or baps work very well too. But you do need to take care with defrosting...don't just leave them out on the counter overnight! . I find if I take them out the freezer in the morning and pop them into an insulated lunchbox or bag along with the usual fruit, carton drink etc but no other cool pack then the sandwich will be defrosted but still nicely cool by lunchtime.

    Thanks all! I am about to attempt a loaf of home made bread and will make some hummus too, that's some of next week's lunches sorted!

  • I know from experience that mayo dosnt freeze well, though if you use a small ammount in a sandwich its still edible. One thing i have noticed though is mayo acts as a preservative, so that if you make chicken mayo for example, the chicken will keep longer than it would dry. using a freshly cooked chicken (brought that day from a supermarket, reduced before closing time), it should be safe to eat for at least 3 days from the day the chicken was cooked. Obviously be careful and ensure stored correctly at all times!
