Jam sugar
I have found a recipe for Pear Jam http://www.cottagesmallholder.com/pear-and-lemon-jam-recipe-93/ which uses jam sugar. Could I replace jam sugar with ordinary sugar and use more lemons to get it to set? What quantity of lemons would I use for a bag of sugar? I know pears are low in pectin so would need a good set.
