Jam sugar

I have found a recipe for Pear Jam http://www.cottagesmallholder.com/pear-and-lemon-jam-recipe-93/ which uses jam sugar.
Could I replace jam sugar with ordinary sugar and use more lemons to get it to set? What quantity of lemons would I use for a bag of sugar? I know pears are low in pectin so would need a good set.

    I never use jam sugar as I think it is expensive. I do just as you say and add lemon juice

    How much lemon juice per bag of sugar?
    If you find you have not added enough, do you have to cook the lemon juice in?
    I want the pear jam to be quite chunky.

    The silver spoon has a recipe for pear jam which uses 2kg pears, juice of 1 lemon and 1kg sugar.

    you can also use lemon pips, tied up in muslin and left in the pan during the boiling stage.
