But seriously, you could do a lot with gammon. It works as part of a pea and ham soup (I'm not sure your husband will be all that enamored with it, though). Carbonara, chicken / turkey and ham pies, risotto...

I make chicken and ham rissotto. I freeze left over gammon and chicken bits - and the stock from the chicken (I normally do mine in the slow cooker now, so the stock is made at the same time - if I roast the chicken I then boil the carcass to make the stock). Rissotto rice, chicken stock, chicken, ham, diced mushrooms, peas and sweetcorn (or whatever veg you want to add) with a sprinkle of freshly ground black pepper - simple to make, tasty, and very filling.Cheryl0

I would make a quiche too, you can put in any veg hubby does like. I usually do onions, touch of garlic, red pepper, mushrooms, ham and thyme or oregano in the egg. I top with sliced tomatoes. I use the same mix to make tortilla (purists will cringe!!) sometimes adding peas. Obviously this has chunks of boiled potato instead of the pastry.
Chicken and bacon casserole, brown some chunks of chicken, add thin shreads of ham and a tin of tomatoes or passata, add a pint of stock (any kind) and either a red pepper (serve with veg or mash) or a tin of beans (I use cannelini, but any will do - serve with bread) and herbs, usually oregano and basil. Simmer as long as you like, I like the chicken very soft, but til its cooked if good enough.
English breakfast salad - softish boil some eggs, carve some ham (or you can use grilled bacon. I suppose you could grill the ham in thick slices, but I haven't tried this), fry some field mushrooms in a little butter or oil (can add a bit of black pud if you want). Make a salad of your fav salad veg, I use a few kinds of lettuce, red onion, carrot and boiled new potatoes. Top with the breakfast elements (cut the eggs in half, the yoke makes a lovely dressing) and serve (I add walnut oil dressing to mine)

First chop your gammon into postage stamp sized pieces.
Then you might like to try this recipe: pasta, peas and ham - I know it sounds awful but is delicious and dead easy.
Boil water in a large pan, add dried pasta (I use twists or quills), boil for 5 mins. Add frozen peas, cook together for a further 5 mins. Check pasta and peas are both cooked. Drain through a colander, throw back into pan, replace on heat and add a knob of butter. Now pour in some fresh cream or sour cream or creme fraiche - basically whatever you've got - and add grated cheese and chopped ham. Heat gently while stirring until well mixed, sprinkle chopped parsley over if you like and serve.
Obviously amounts depend entirely on how many people you are feeding. When you're heating the pasta through at the end, if it seem dry just add a splash or two of water.
I love this dish as it includes protein, carbohydrate and a vegetable but only takes 15 minutes maximum and only needs one pan! My children really like it too and it's the only meal we have every week without fail.

I so love bacon / gammon joints for this reason it goes so far and there's always loads left. We usually have ham egg n chips, sandwiches, a quiche or soup.
Or just cold sliced gammon, mashed potatoes and buttery sweetcorn.

I would fry off some onions, garlic and chopped carrots, perhaps celery if you have any. Add stock, a tin of chopped tomatoes and a couple of handfuls of lentils, simmer until veg and lentils are tender then add chopped up gammon.Mortgage
