    A friend of mine regularly makes a salad with leftover gammon mixed with couscous, cold salad potatoes, cherry tomatoes and whatever else is in the fridge. She adds low-fat dressing but you could mix it with whatever dressing you fancy.
    Not good for taking to work, but tonight we are having gammon carbonara with our leftover gammon. Pasta mixed with 2 eggs, creme fraiche, parsley, a knob of butter, some hard cheese like parmesan and a tang of mustard powder. Yummy!

    The best (non clumpy) fried rice is made with dry cooked rice - otherwise it'll be too wet to fry well.

    It's best made with rice cooked the day before, then quickly cooled (spread out on a tray is fastest) then properly chilled. Make sure when you cook it you heat it through enough to kill off any possible bugs.

    Gammon fried rice sounds lovely - with lots of added extras like spring onion and peas. Nomnomnom.

    Slice it and have it fried in butter with cabbage not very healthy but very tasty. i would also maybe cube it and have it in pastawith red onion and tomato and chilli sauce.

    Add to a pea soup
    chop it up and mix it with rice, peas and pineapple serve with a bbq sauce

    You can do pretty much anything, you would use ham for, even down to just slices cold with salad in a sandwich! You could dice it up for risotto, pasta or make a pizza. You could add it to a pie with chicken, you could make quiche, make a topping for jacket potato, with sweetcorn.

    Suggestions from the book "Waste not, Want not":

    Use in Macaroni cheese, omlettes, quiche lorraine, pancakes, jacket potatoes, scrambled eggs, pinapple and ham fritters, ham croquettes.

    Ham croquettes: For each 2 tablespoons of minced meat allow 1 tablespoon of thick bechemel sauce or bread sauce, a little grated onion, beaten egg and breadcrumbs. Mix ingredients together, shape into sausage shapes, dip in egg and breadcrumbs, deep fry till golden.

    Ham & Potato Pie: Serves 2: 4oz cooked ham or bacon, 1 large or 2 small onions sliced, 2 medium cooked potatoes, 1 tablespoon parsley (optional) 1 teaspoon mustard grated cheese, dried breadcrumbs, teaspoon of butter.
    Cut meat into strips or pieces, cook until crisp,remove from pan. add onion, mash in the potato add the meat seasoning andparsley, mix well, press into a pie dish. Cover with crumbs and cheese dot with butter, return to oven until hot.

    think i will make a quiche , but not add salt to the mixture , it should balance out ?? hopeful !!
