Leftover Gammon

Hi all,

I'm slow-cooking some gammon for tea, and hope to have plenty left (if i hide it from his nibs in time!). I want to make a pie on Monday using the leftovers and some chicken, and wondered if it was safe to freeze the cooked gammon until i need it?

Of course, is anyone has any great chicken and ham pie recipes they'd like to share, i'd be much obliged.... ;)

  • I can't see that there would be any problems freezing cooked gammon - after all, we freeze lots of other meats after they have been cooked - stews, pies etc.

    You've also just reminded me I have 8 gammon steaks in the freezer that I had forgotten about :D

    No problem. Just remember that you shouldn't freeze any extra pies you might make because defrosting and then refreezing stuff isn't a good idea even though you'll be "cooking" the gammon again in a pie.

    What you might find the best way to go is to cut the gammon into portion sized amounts either as slices or as chunks and freeze them separately. That way you can use it bit by bit as needed.

    I usually steam the gammon, then chop the leftovers and open freeze so that I can use as much or little as I like. I like to use a a handful in quiche, or on a pizza.

    My favourite pie starts with chicken, ham, celery, onion and sweetcorn, but you can add any veg you like. I always use cooked chicken. Saute the veg in a little oil or butter, add about 1/4 pint of stock, and cook till tender. Strain and use the stock to make a white sauce with a little milk and flour and a splash of lemon juice. Mix in the veg with the chicken and ham and fresh parsley or choice of herbs. Black pepper to season. Fill the pastry case, put on the top, brush with egg and bake for 25-30 minutes at 200C.

    I was'nt hungry either...now I'm ravenously starving hungry... I wan't a nice gammon and chicken pie too - hee hee. Problem is the Slow Cooker is still bubbling away with a nice beef stew and dumplings on the go. Should be ready by 6:30 pm. :p Why is my stomach making all those hollow noises ... hee hee.... :rotfl:

    Got a really good deal on a ready to roast Gammon for Christmas Day , pigged out on it (lol) but still have quite a bit left. It is now a day old and sitting in the fridge even after we had sarnies etc. Any ideas as to what we can do with it and how long I can keep it in the fridge before I poison everyone??
  • You could try this;chop it up into chunks,cook some spuds(also in chunks),cook some peas,make a cheese sauce,mix all together and bake in a shallow dish until brown and bubbly.A tin of condensed soup-mushroom or chicken works instead of cheese sauce.HTH :rudolf:

    Why not slice it up and mix with pasta and then add a cheese sauce or a white sauce.
    place it in a dish and sprinkle grated cheese on it and place it in the oven unlil the cheese is nice and brown.

    You could mix some chopped Gammon with some white sauce, or cheese sauce, a little fried onion & mushrooms, some peas & sweetcorn, then top with mashed potato and bake in the oven until golden & bubbling.
