  • Hi All

MimiF, I hope things improve soon for your Dad.

Haven't posted for a few days as my life has been chaotic! Mil has had falls and needs a lot more care so OH is spending a lot of time with her. We are off on our hols soon and were very worried about leaving her but she has agreed to go into respite care while we are away. We took her to visit the care home and she was over the moon! She says is it will be like a holiday in a luxury hotel for her, bless her. Both my daughters (26 and 30) are having problems and leaning heavily on me at mo. Went for another session at the Pain management programme this morning and they took us through a wonderful relaxation session - bliss!!

On the OS front, I now have my (free) slow cooker and recipe book so will try out some mince in there tomorrow, can't wait! Fly ladying has been on hold for a few days but tackling bathroom and cloakroom at weekend.

Hope you are all having a good day.

    Sue

It matches people up with wanted/unwanted items and is a not for profit organisation, so think I am OK in posting the link here.

Yes, it's absolutely fine to post a link to freecycle :)

Thanks for the welcome, everybody :D - I can't say I'll post every day because I'm not really very OS every day(!), but I will continue to lurk and try and post a bit more regularly!:p

Hugs to MimiF :grouphug: - I hope your dad pulls through and is OK.

Biscotti recipe below for Penny (and anyone else who fancies it!). 60 sounds like a lot, but they really do disappear quite quickly...:rotfl: We made them and put them into kilner jars last Christmas with a pretty labels on and gave them to people as gifts - they went down really well (in fact, several people have given us the kilner jars back over the year in the hopes of re-fills...so I think they were a "success"!;)).

Fruit & Nut Biscotti (makes about 60) - copied directly from the book which is why you've got g/oz and cm/inch - not because I think that you won't all know the conversions...

    500g/18oz plain flour
    500g/18oz unrefined caster sugar
    1 tablespoon baking powder
    5 eggs, lightly beaten
    100g/3½oz sultanas
    100g/3½oz dried apricots, chopped
    100g/3½oz pitted dates, chopped
    100g/3½oz shelled pistachio nuts
    100g/3½oz whole blanched almonds
    100g/3½oz hazlenuts
    Grated zest of 2 lemons

    1. Heat the oven to 180ºC/gas mark 4.
    2. Mix the flour, sugar and baking powder in a large bowl. Add half the beaten eggs and mix well, then add half of what is left and mix again. Now add the last quarter, little bit at a time, until the dough takes shape but isn’t too wet (you may not need to use all of the eggs).
    3. Add the fruit, nuts and lemon zest and mix well.
    4. Divide the dough into 6 and roll into sausage shapes about 3cm/1 inch in diameter and place, at least 6cm/2 inches apart, on baking trays lined with baking parchment. Wetting your hands when rolling these out helps to prevent the dough sticking.
    5. Lightly flatten the “sausages” and bake until golden brown, about 20-30 minutes. Remove from the oven and leave for 10 minutes to cool and firm up.
    6. Reduce the oven temperature to 140ºC/gas mark 1.
    7. With a serrated knife, cut the biscotti on a 45º angle into 5mm/¼ inch slices and place these on the baking trays. Return them to the oven and cook for 12 minutes, then turn the biscotti over and cook until they are a pale, golden colour (another 10-15 minutes).
    8. Remove from the oven and cool on wire racks. Store in an airtight container.

Anyway, must get back to more official "work" :o - will pop back on later!

  • Afternoon :hello:

Haven't read through the whole thread since this morning, when I didn't have time to post, and can't remember much of what's been said already, except enough to say ((((hugs)))) to MimiF and a big HAPPY BIRTHDAY to LearningToSave!!

Was supposed to be meeting Nelski and possibly Shez for a quick drink in Canary Wharf after work, but it now looks like Nels has meetings and can't make it :( so as Shez was going to have trouble getting there anyway, I've PM'd Shez and said let's do this another time with a bit more forward planning!

Still no news from the solicitors, though both my mortgage broker and my dad have chosen today to phone me up and ask how it's going

On the bright side I have freebie tickets to the opera this evening :D I thought I wasn't going to get any because the website I write reviews for is STILL waiting to be relaunched and hasn't been updated for months, but when I told this to the press officer at the English National Opera he said he'd still give me some freebies for this evening :A So I am taking my favourite cousin who I haven't seen much of over the last few years as she's been living abroad.

Discovered today that reheated bangers, mash & peas makes a fab working lunch, but doesn't react well to being sprayed all over my computer screen while I'm in fits of horrified laughter reading through the "Pregnancy's Best Kept Secrets" thread on the Families board! If I didn't want children before, I certainly don't now :o

Anyway, I'm busy so ought to get going. Hope everybody's having an OK day :)

    Love Rzl xx
