bread and butter pudding including banana and chocolate versions (merged)

  • I made this last night -

    4 slices of bread and butter with the crusts cut off and the slices cut into triangles (or squares). (I used up some wholemeal seeded bread which gave a nice slightly crunchy texture to the finished pud. I also used half fat butter and the finished product was still as tasty as using full fat butter).

    1 large egg plus an egg yolk whisked with 3 tbsps caster sugar and the seeds from a vanilla pod.

    5 fl oz milk and 5 fl oz single cream (I used Elmlea light) slowly heated with 3oz of any chocolate. Do not bring to the boil - you only want it warm enough to melt the chocolate.

    Once the chocolate has melted mix the egg mixture in with the milk/cream/chocolate mixture and then pour the whole lot over and between layered slices of the bread & butter in an oven proof dish.

    (For extra decadence you could sprinkle some of those Cadbury chocolate chip pieces designed for cooking between the slices of bread. Funnily enough they don't melt entirely in the cooking process.)

    I have also cooked this using a few chopped nuts instead of choc chips.

    Cook for between 12 and 15 mins at about 200C

    also a cheaper way which good for using up jars of chocolate spread,just spread the bread with that instead of butter :)

    i bought a load of reduced bread in tescos which was reduced to 4p a loaf....so .i was thinking of doing some bread and butter pudding....so how do you make yours...and do you add any extra bits to it.....

    Lightly butter it and then Jam, or Marmalade, or Chocolate spread. Or the traditional dried fruits scattered. Then I use single cream and egg (yolk only) - can use a bit of milk to stretch it, but not so nice (and with bread at 4p you can treat yourself!!!

    Also, better to let it all 'sit' for a good half hour so that the liquid soaks into all the bread - then you don't get any of those nasty dry patches that I remember from my childhood.

    Don't forget you can crumb the bread you dont use and freeze it to use mixed with cheese for toppings on savoury dishes.

    I like to plump up dried fruits like sultanas by pouring on boiling water, then just leave for 5 minutes or so. Soaking overnight in cold water would work the same.

    I add plenty of mixed peel to the dried fruit mix (and for grown-ups only bread pudding) a splash of cointreau, drambuie or other drinks-cabinet leftovers! :beer:

    i like mine with marmalade spread on after the butter and orange zest. my mum does a lovely one with dried fruit,cherries and lemon zest.

    i did one the other week which was the best i ever did and left it soaking for about 3 hrs i also kept my eye on it and took it out when it was just set.

    DON'T forget to grease the dish well that you are cooking it in

    i make mine like monty except i do use milk also i use the whole egg :) also i leave the crusts on as i love the crunchy bits when its cooked yum yum

    choc spread one with some choc chips sprinkled over too is my fave
