I've attempted to make burgers with similar recipes to these but everytime without fail they've fallen apart when I've cooked them. I end up with a mince and onion concoction in a bun!!! it's edible but not really what I want - any ideas where I'm going wrong?
Leave out the salt - not necessary - do not use TOO lean a mince - and yes, the burger presses help - then leave in the fridge for a while before cooking. The spicy lamb burgers are simply the best thing I have made in a long time, I left out the chilli for the children)

Not even sure that these are still about, but I got a rather nifty burger press from Tupperware. I'm almost certain I've seen a web site somewhere.....

I have just bought a burger maker from Lakeland, and some beef and lamb mince as OH wants to make his own burgers. Does anyone have any tried and tested recipes, also using turkey mince, please?

I like to keep my burgers simple, and leave adulterating them with all sorts of rubbish to the professionals.
BEEFBURGER
Makes 2 quarter pounders
INGREDIENTS
250g of lean minced beef*
Salt and ground pepper to taste
1 tablespoon of sunflower oil
METHOD
Season the mince with the salt and pepper. Divide the mince into two halves. Squeeze each half into a ball and then flatten it out into a disc. Make them firm, so that they don’t fall apart. Make them chunky, as thin edges will cook too quickly.
Put the oil into a frying pan on a medium heat. Fry the burgers for about 5 minutes on each side.
ADDITIONS & ALTERNATIVES
Use minced lamb, pork or turkey instead of minced beef. If you use minced lamb, add some finely chopped mint, dried mint or some mint sauce.
Add some finely chopped onion. Add some herbs.
If you need to make the mince go further, add some grated carrot.
If the burgers won’t hold together, add some beaten egg. If you make the mixture too wet, add some breadcrumbs.
Cook the burgers under a preheated medium grill for about 5 minutes on each side instead of frying. If the mince is very lean, you might need to coat the burgers with a little oil.
* Use good quality lean and finely mince. The cheaper the mince, the higher the fat content and the more coarsely it is minced. Use chuck steak, which is reasonably cheap but doesn’t have too much fat, and either get the butcher to mince it or mince it yourself.The acquisition of wealth is no longer the driving force in my life.0 -
i like to make mine with some very finely chopped onion done in the wizz wizz (aka blender chopper attachment) seasoned, a few breadcrumbs and an egg.
approx quantities
500g mince
1 medium onion
2-3 tbs bread crumbs
1 medium egg
