I had my first attempt at making burgers last night using:
full fat mince, herbs, fish sauce, finely chopped onion and a dollop of mustard
cooked them in the george foreman and they were really dry, only cooked them for about 12 mins but they burnt too
Any ideas where I went wrong?Only one debt left - overdraft £80:A0 -

Hi,
I've added your question onto the main burgers thread. It should help.

Hi empy,
There's an earlier thread with lots of recipes and tips on making homemade burgers that should help so I've added your thread to it to keep all the replies together.

What do you add to mince for your homemade burger recipes? Any suggestions....cheers.{Signature removed by Forum Team}0

All sorts - anything from nothing to loads of chopped veg and herbs.

I don't like to add anything, unless there is a good reason for doing so. I leave adulterating burgers with all sorts of cr*p to the professionals.
BEEFBURGER
Makes 2 quarter pounders
INGREDIENTS
250g of lean minced beef*
1 tablespoon of sunflower oil
METHOD
Divide the mince into two halves. Squeeze each half into a ball and then flatten it out into a disc. Make them firm, so that they don’t fall apart. Make them chunky, as thin edges will cook too quickly.
Put the oil into a frying pan on a medium heat. Fry the burgers for about 5 minutes on each side.
ADDITIONS & ALTERNATIVES
Use minced lamb, pork or turkey instead of minced beef. Use chuck steak, which is reasonably cheap but doesn’t have too much fat, and either get the butcher to mince it or mince it yourself.
If you need to make the meat go further, add some grated carrot.
If the burgers won’t hold together, add some beaten egg to the meat mixture. If you make the mixture too wet, add some breadcrumbs.
Grill the burgers under a medium heat for about 5 minutes on each side. If the mince is very lean, you might need to coat the burgers with a little oil.
TIPS
You can make the burgers using a burger press. This is a round mould, which you fill with the minced meat and then press it into uniformly sized burgers. However, hand made burgers have a “rustic charm” and there’s no washing up.
* Use good quality lean and finely minced meat. The cheaper the mince, the higher the fat content and the more coarsely it is minced. The acquisition of wealth is no longer the driving force in my life.0
