Of couse you can have the recipe.
says on recipe you can get 10 out of mix but i got 12;)
9oz (250g) plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
3 large ripe bananas
1 egg
2 1/2 oz (70g) brown sugar (can use caster instead)
2fl oz (50ml) vegetable oil
1oz raisins (i used mixed dried fruit)
I also added some milk to make the mixture abit slacker, it was quite thick.
sieve the flour, baking powder, bicarb,salt, cinnamon and nutmeg and put to one side.
Place the bananas in a bowl and mash, i used my hand mixer but you can use a fork.
Add the egg, sugar and oil and mix well.
Add the dry ingredients and mix well again. Finally mix in the fruit.
Fill muffin cups 2/3 full.
Bake at 190oc/gas 5 for 20/25 minutes.
I have tried replacing the fruit with chocolate chips and also tried it with some walnuts, both times they turned out really well.:D'Be kinder than necessary, for everyone you meet is fighting some kind of battle'0 -

Hi everyone - just thought I'd catch up before heading off on the Pilgrimage tomorrow, can't believe how fast this thread grows but it's fantastic that we all support one another.

A big welcome to all the Newbies, the more the merrier. Hope everyone has a fantastic Bank Holiday weekend, hugs to those that need them and I will log back on when I return on Monday, hopefully my GC total won't have changed as have left enough food cooked and ready in the freezer, muffins, hobnobs etc so OH shouldn't need to buy anything else. Muffins
300g SR flour
80 g sugar
1 tbsp baking powder
220ml milk
100g melted butter
2 large eggs
Mix the wet ingredients into the dry and then pour into 12 muffin cases and bake at gas 6 for 30 minutes. Eat fresh or freeze.
Variations:
2 mashed bananas and 100g choc chips
100g raspberries, 100g white choc chips
200g blueberries, top with demerara
2Tbsp instant decaf coffee, mixed with splash of boiling water, 200g rough chopped walnuts.:A0 -

I just put the banana muffins in a freezer bag once they were cooled and froze them like that. They defrosted nicely in the microwave for about 20-30 seconds and tasted just like freshly baked. HTH
I just made some Twinks. I added a couple of handfuls of sultanas to the mix and got a total of 58 hobnobs. Hopefully there will be some left for when my mum comes to visit on SundayWe've already eaten 6!!
