    Have made today dundee cake which OH loves and coconut sponge cake which has nearly all gone already:rolleyes: will make the biscuits tomorrow as now tired of baking and just have got the kitchen back to looking normal again:rotfl: :rotfl: def will try the spoon , will make them while the kids are at school otherwise no chance of them lasting one minute past coming out of the oven and wanted to take a pic and also this time will freeze some as did not realise I could:rolleyes: (no one said I was bright:D )

    I really enjoy shopping now though, going at the whoopsie times, thinking to myself do I need that, can I freeze that, can I make it cheaper, what can I do with that etc it really has opened my eyes to the cost of it all and how I can cut back, yes I am having a lot of nsd to stay in budget but once I get more of a weekly meal plan going and marrying up storecupboard ingredients to fridge to freezer we will eat like kings on money of paupers:D

    I am keeping all the inner wrappers of the cereal boxes ready for the big freeze :D and I used to love baking but recently am baking for England:D kids are not complaining;)

    So sorry to hear your news searching. Be kind to yourself over the next few days and weeks. Many of us have lost babies but keep up your hope...I like others went onto to have my son afterwards. Thinking of you.

    Just to report back that the experiment with defrosting the mince to make the hm burgers was absolutely fine. In true OS fashion OH added breadcrumbs and diced mushrooms to the mix to make it go further. Yum yum.

    Crockpot - sorry to hear about your Job, I too was made Redundant some years back, was going to take some time out and return to work but 5 years later I'm still a SAHM and I haven't looked back since. Having a great time, cooking, gardening, decorating and doing all the things I've always loved. Hope things work out for you whether you decide to look for another job or not.:D

    Thanks mandy_moo_1 - for the Garlic Dough Balls recipe, have friends coming over on Sunday and was planning Lasagne so shall make these to go on the side so thanks again.:T

    Thanks also to BigMummaF - have made a note of the coconut recipe and shall give those a try tomorrow as I still have a couple of bags of dessicated coconut from Asda when it was 11p:j

    DD2 off to a friends after School tomorrow and I usually buy something for her to take round but in true MSE style I have tonight made some Chocolate Krispie cakes for her to take ;) Finding I get a bit of a kick out of saving money:rotfl: Must go now as getting Square eyes:rotfl:

    Well week one if up for me and I am in shock, not only have I only spent £80 but we have stuck to meal plan.

    We did go out today but had extra money to cover that so did not come out of grocery budget. I am going to try again this week to stick to £100 and will do my shopping list and meal plan tomorrow.

    I do have one confession to make though , I did taken £10 to buy chinese last night as a treat :eek: so acually only spent £70. OK I feel so guilty now going to go and replace the £10 out of money left from out day out today lol

    Had a delivery from MrT last night totalling £88. I've made a menu plan for the next 14 days out of all that plus what we have already so not too bad. :D

    Tonight I have semi-prepared my first ever home made burgers using a recipe on the MrT website. I will let you know how they turn out tomorrow!
    We are going to have them in burger baps with coleslaw, potato salad and possibly some home made wedges if I have time.

    Had to take my micra to the garage today to have a fault on the dashboard fixed. It cost a total of £99. :eek: £16 for the part and the rest for labour!! Good job I have a car account for repairs and emergencies.

    Now - what can I do to use the mascarpone up quickly?

    This is a recipie from a baby mag, but should be ok for adults. I'm plannning on trying it next month.

    200g pasta
    1 tbsp olive oil
    1 red onion chopped
    1 garlic clove
    400g passata
    1/4 tsp sugar
    2 tbsp basil
    75g marscarpone
    salt & pepper to taste

    cook pasta
    saute onion in olive oil until soft
    add garlic and saute for another minute
    stir in passata & sugar, season to taste & cover
    simmer gently for ~ 10 mins
    remove from heat, add basil & blend
    return to pan, add marscarpone. Stir until melted & simmer for 1 - 2 mins
    add the pasta

    This is freezable and apparently makes 4 portions, but as i said, this is from a baby mag so the portions are probably small.
