Quick update, another NSD:j:j2 in a row yipee. Don`t think I can do 3, but will try really, really hard. Got out a large tray of 800g mince from freezer, so will have a bit of a mess about and a bit of fun to see how farrrr I can streeeetch the mince out to. I can't remember now, but think this might be the place that led me to the recipe for making "chocolate coconut bites" that you're bountyenjoy! It's on recipezaar.com , 227707.
200g condensed milk
100g dessicated coconut
8oz (approx) icing sugar
8oz (dark) chocolate
1. Mix condensed milk & coconut.
2. Add enough icing sugar to make a stiff dough.
3. Form into ball shapes & place on a baking tray.
4. Leave in fridge, preferrably overnight, to firm.
5. Melt chocolate & dip coconut mixture into it to cover.
6. Leave to allow chocolate to harden. yeah...right....like THAT'S gunna happen!
The condensed milk was £1:20 for a 407g tin in MrT today...strangely the Light version was 407g £1:20 & the ordinary was 370g @ £1:20:confused: Anyways, hoping to give it a go, maybe tomorrow.

oh, and that's what I remembered to ask.....in that TV prog on ITV1 about food, someone (in an Indian restaurant I think) was using what I can only term as a coconut baller, sort of scraped the flesh of the coconut.
Does anyone know what this is and where to get one?

Just popped into Mr T and Asda last night to see if they had any whoopsies - got 2 quorn burgers for 50p and and nan bread for 22p in Asda along with another couple of 8p noodles for DS. In Mr T got two tubs of mascarpone for 10p each, value mozzarella for DD lunch and some cherry toms.
Now - what can I do to use the mascarpone up quickly? Tried adding it to pasta and leeks for lunch, not bad but a bit bland. Don't really want to use it for a sweet dish as am trying to loose weight. We are all veggie and stocks are running low as end of week. Have leeks and potates left, plus lots of tins of beans (not baked) and other store cupboard essentials.WL 11 st 5lb as at 050109. 160209 11st 2lb
