Just popped into Mr T and Asda last night to see if they had any whoopsies - got 2 quorn burgers for 50p and and nan bread for 22p in Asda along with another couple of 8p noodles for DS. In Mr T got two tubs of mascarpone for 10p each, value mozzarella for DD lunch and some cherry toms.

Now - what can I do to use the mascarpone up quickly? Tried adding it to pasta and leeks for lunch, not bad but a bit bland. Don't really want to use it for a sweet dish as am trying to loose weight. We are all veggie and stocks are running low as end of week. Have leeks and potates left, plus lots of tins of beans (not baked) and other store cupboard essentials.

There is nothing as delicious as homemade naan bread from your breadmaker!
Can supply recipe if required. Its the difference between a fresh crusty loaf and cheap sliced white!

Thanks but I don't have a bread maker and am frightened to get one as myself and OH need to loose a couple of stone each. Kids would like it but adults wouldn't be able to resist. Also we only eat wholemeal bread, I've tried to make it in the past old style but no luck - always far too heavy. The kids had that whoopsied nan I bought yesterday so they were happy and we are saved.

Hugs for anyone else who needs them. Hope everyone is well tonight. After a heatwave few days it is freezing here in Devon, wet and miserable!

I was going to suggest tiramisu! But on a savoury note, you can use it instead of cream when you make soup. Goes well in leek and potato soup in fact! That's what I use it for anyway! :)

OK dinner over - I have used almost all of one tub of the mascarpone - some in the pasta for lunch with the rest I made potatoe cakes using the cheese instead of butter and milk and added a few white kidney beans I had left from yesterday and some steamed leeks. Ate this with various odds and ends of salad veg that were sitting in the fridge. Males had the quorn burgers as well. I might try a leek and potatoe soup for tomorrow. Have you made this in a slow cooker. I did it years ago but not very successful. When do you put the mascarpone in? I am guessing at the end of cooking?
