125g butter or marg
3 tbsp sunflower oil
125g demerara sugar

i actually ended up cooking them for about 30 mins, they were lovely, and vanished very quickly.

Well when I got home tonight I decided I would try to do something with them, so I put some honey in a pan with some sugar to boil for a few minutes. Then I cut up put the last of my fresh pineapple (had it for a while) and put in the bottom of a greased dish and poured the sugar mixture on top.
Then I went to the tin to get the muffins and they weren't as bad as I had thought they were going to be. I think they had dried out a bit, anyway I managed to get them out of the cases quite easily and put 5 of them upside down on top of the pineapple and put it in the oven for about 15 minutes.
Served hot with fresh cream and it was a really nice version of pineapple upside down! Haven't had anything like this type of pudding for ages.
Might do something similar using raisins with the other half of them tomorrow, and some lemon juice I think.
Haven't posted my weekend shop yet:eek: , but as I have dozed off twice in the middle of typing this, perhaps I need to go to bed now. Got to complete a job application too tomorrow, so need my wits about me.
I shall be trying something tonight, thanks for your idea - sounds good and I've got all of the ingredients (well, tinned pineapple - should be okay).

Hi all
Thought I hadn't spent much this month but got up the courage to add it up yesterday - it' s terrifying! AND I had upped the budget to £250 as well. Think the problems are that:
- DD17 keeps going on different 'diets' & therefore needs all kinds of foods we don't already have in....
- started my month far back in April rather than May!
- A BH trip away at the beginning of the month - if I don't include all the food bought then it will looks loads better.
Ok will update sig later when have plucked up courage!
BTW - I am panicking as I have 2 guests tomorrow who are visiting from the US - need to impress them as they may be buying from me. I am frantically housecleaning, but will also need to provide some kind of lunch for them; preferably something I can make today or quick for the morning (they arrive at 11 & I have to pick them up from the station).
Does anyone have any ideas of foolproof easy food???? I could get fresh sliced meat & bread from the farm shop, & also cakes, but not very MSE is it?? BTW they won't be buying food from me, so no need to impress that way!

Pretty good although I need to update it because we spent some more. Our local Morrisons has washing powder on offer so OH bought 6 boxes!!!! I have done two small shops at Somerfield ( which i hate doing as it's so expensive:rolleyes: ) mainly for salad things and ice lollys which we are going through so quickly it's unreal. I need to do a fruit and salad shop at the market tommorrow. So i have spent and extra £20.31 taking my total up to £79.17 leaving me with £70.83 for the rest of the month.:eek:
I have two freezers full to the brim so i think we'll be living off those for a bit and just getting fruit & veg.
I buy the Asda ice poles that you bring home and freeze yourself in a box either 50 or 100 there are two boxes small ones and the large long ones £1 last time I bought them, put them in the freezer and there you have loads of them for little money, my kids eat me out of house and home and when the nice weather comes on they think every 5 mins is a good idea to have a lolly:rotfl: :rotfl: so that solves the problem as they are so cheap I don't mind anymore, used to buy BOGOF calypsos but they ended up being expensive at the rate the ywere eating them and then went to shops own brand of lollies with sticks but they knew they were there and ate morethan necessary so the final compromise was the ice poles and now everyone is happy:D0 -

Wow, you learn so much on this site, I normally buy long life to keep as backup, but hubby likes it as it's creamy and great in coffee, so never lasts long.
yep you can freeze any milk!!
when i do it, i open the plastic milk carton and use a drop in my coffee before freezing it, to allow the carton to expand. then just defrost it on the side, or in the fridge overnight....never tastes any different to us!0 -
