try making a free vanilla mousse using some gelatin whisked into a muller vanilla yoghurt until light and fluffy and chilled until set, it is quite nice and as you incorporate air into the yog it makes 2 servings too....

yesterday was a good day - did an EE day in the end.
today I will be having
- banana and muller light yoghurt (eaten)
- prob an omelette for lunch
- fish for tonight with veggies and a jacket spud if i do an EE day

lunch - "burgers" & veg "chips" hopefully, gonna have to see, am in so much pain at the mo I can't really think straight, so I will have to see what happens when my pain meds kick in!:rolleyes:

A loss of 2 1/2 lbs for me this week
Wasnt overly chuffed till I went and got the weights off the kitchen scales. 2 1/2 lbs is quite heavy

No problem - I make it quite often as we all like it too!
Meat Loaf
Syn Free on original
454g lean mince beef
Handful button mushrooms cut into quarters
8-10 rashers extra lean bacon
½ - 1 tsp mixed Italian herbs
1-2 cloves garlic, crushed
1 small onion finely chopped
1 level tbsp tomato puree (½ syn per level tbsp).
1 large egg, beaten
Salt & pepper to taste
Pre heat oven to 200oC/Gas 6
Dry fry mince, onion, garlic & mushrooms until mince is brown & the onions & mushrooms are soft – drain off any excess liquid.
Combine all ingredients EXCEPT THE EGG together & mix well, then gradually but thoroughly stir the egg into the meat mixture.
Spray a loaf tin with fry light and line with the bacon, then firmly press the mince mixture into the lined tin.
Bake in the oven for 25-30 minutes.
Serve with vegetables or salad, or save some to have cold for lunch the next day.

The oatmeal this is dead easy Gill, I just measure out the 28g of oatmeal and put it into a plastic container with a muller light yogurt mixed into it. Put the lid on and leave in the fridge overnight then eat! No need to cook. In the morning you can add fresh fruit to it if you like. ie - if using strawberry yogurt add strawberries etc. It is surprising filling!

Good Morning Everyone, just a flying visit as am about to take Charlie out and then DD2 to the station and then hopefully Aldi to buy a new laptop. Finally decided to get one, but not sure if they will have any left once I get there.
Breakfast - bacon and eggs and hash browns (forgot to put the hashbrowns back in the freezer yesterday so they had to be cooked:o, I don't normally have the same breakfast twice in a row)
Lunch/Dinner - Roast chicken, mashed potatoes, brocolli and sweetheart cabbage with carrots.
Supper - Left over chicken in a wm roll with salad and a yogurt.
