i guess these kind of warnings are not just limited to iphone, i have seen them on game consoles, DVD recorders (HD) etc.
I believe they do this to protect themsleves agaisnt any clalim and secondly as bigbluebearbrigade said, just to scare novice guys!0 -

Not really, Apple could release a firmware release that is required (ie upgrade Itunes and the new Itunes require a set firmware, and without it you can't use the iphone with itunes, as they do to ipod) and it could brick the phone for good. However there's too great a risk that they'd bork phones that have not been locked and get more grief than it's worth. Lets face it Apple have the money for the phone, and whilst they are losing some money from people not using the service they are clearing old redundant stock quickly now.
It's would be a silly thing to do from a consumer acceptance point of view0 -
I have ordered a iPhone. I am going to unlock it. Is it still possible to use the iPod(from the phone) on it via iTunes or not ? I am confused.0

Once you've used jailbreak on the phone you can use it as normal0
