What to do with oodles of leeks?

    I love leek and tatty soup or a new one i have started to make is a leek and chicken pie is yummy let me know if you want the recipe though is from a healthy eating course will look out the recipe.

    I wouldn't mind the recipe for that leek and chicken pie of you've managed to find it. Love leeks and off for Easter this fortnight so going to make the most of it and get down to come cooking :D

    I've been Money Tipped!
    Chop up some leeks, (add in brussel sprouts if you like them) simmer till cooked. Add some grilled bacon bits add in a little bit of butter and some rock salt and ground pepper, lovely with your roast dinner, and some buttered potatoes. Yummy.

    There a pile of recipes here for leeks that you could check through, some sound really good.

    Leek and tofu scramble! Just chop them up and bung them in a frying pan with some fresh tofu, onion and curry powder and serve on toast :)

    Blimey, I could do with some of that now...

    thanks all some brilliant ideas here. we will be hving elle_gees leek and tatty mash for tea tonight, ive got some ready for the freezer for casseroles an will also be trying kunekunes idea. I'll be looking out for some more at this price to try some of the other ideas

    Chicken & Leek Pie ( this will serve 2-4 so adjust accordingly )

    2 boneless chicken breast
    50 - 100g of mushrooms (optional)
    50 - 100g sweetcorn (optional)
    1 large leek
    275ml chicken stock
    2 carrots peeled and cut into 3mm slices
    sprig of fresh thyme
    flaky pastry to cover just the top


    for the sauce
    275ml milk
    20g plain flour
    20g butter
    pinch of cayenne pepper
    50g mature cheddar
    1. put chicken stock, carrots, thyme and seasoning in to a pan bring to boil and simmer for 5 mins.
    2. wash and trim leeks and cut into 1/2 inch pieces
    3. add chicken and leeks and simmer covered for another 10 mins
    4. saute mushrooms and place on the bottom of the dish, then put the sweetcorn on top of the mushrooms
    5. make the sauce by the all in one method then stir in cheese
    6. take out he chicken and cut into bit size pieces and arrange in the dish
    7. pour the sauce into the leek and carrot stock bring to simmer then pour over the chicken in the dish.
    8. roll out your pastry and use it to put a lid on your dish, press firmly over the edges and trim.
    9. brush with milk or beaten egg. make and air hole in the center
    10. bake at Gas 6 , 400f , 200C for 25 mins

    Bacon and Leek Pasta bake. Cook some Penne, fry some chopped smoked bacon, add leeks and sweat until softened.. mix with a cheese sauce, stir in the pasta and bake in the oven until the top goes a bit brown. Lovely!

    Hi, I was in Tesco and they had packets of Leeks on their sell by date for just a few pence per packet.

    I am looking for a healthy (not full of cream or milk) recipe to use them to make soup. I already have a chunk of gammon I can use to add to the soup and can nip out in the morning for extra ingredients. I already have garlic and a pack of three red onions in my fridge to use up.

    I have a large slow cooker and would prefer to cook them in that.

    Any ideas?

    I want this to be cheap and healthy.

    i just lightly sweat an onion and a couple of leeks and a few potatoes then add stock and cook for an hour or so, then blend (but you could leave the soup 'chunky'). that could be done in a slow cooker no problem - i doubt you'd even have to bother with the sweating, just bungit all in and leave it.

    I would clean them, chop them and freeze most of them, tbh, as they freeze really well.

    For soup, I would clean and slice them into about 1 cm slices. First cut the gammon into soupsized chunks, 'seal' in a frying pan (with no extra fat). and chuck this into the slow cooker. Then toss the leeks round the same pan and add to slow cooker. Add other veg if you have any, eg finely chopped carrot, swede etc. If you have a stick of celery I'd chop this and add it in, but I wouldn't buy a whole head for this purpose. Add sufficient veg or ham stock made up with boiling water, a pinch of dried herbs and a good grinding of black pepper and leave until cooked. Only add salt at the end if really needed as gammon gives out a lot during the cooking process.

    If you want a thicker soup you could do any/all of the following:

    (1) throw in a couple of handfuls of red lentils (no need to soak cook these in advance)

    (2) Throw in some small cubes of potato

    (3) When it's cooked, take out about 4 ladles full of chunkyness(avoiding the gammon bits), blend to a pulp with a hand blender and then stir back into the pot.
