    There's an older thread on using up leeks that should help so I've merged your thread with it to keep all the suggestions together.

    I tell you what I did with loads of leeks I had left. Bagged them all up and the kids flogged them to the people in the village. Made a tidy bit of pocket money. My garden is now clear and ready for this seasons leeks.

    i got a couple of packs of leeks (3 in each) reduced to 10p each from sainsburys any ideas what i can do with them. i've never cooked them before but it was too much of a bargain to miss

    they are lovely in home made quiche...

    or, top and tail them (rinse well!) wrap smoky ham, back bacon or (if flush!) parma ham around the outside, pour cheese sauce over and breadcrumbs, and bake on a lowish heat for 40 mins, nom nom nom!

    You could use them in soup, sure there will be recipes on here for leek and potato soup.

    I've made this recipe by Delia which is very good, my kids liked it a lot too.

    I cook them in butter, add flour, then milk to make a white sauce, then some cheese and mustard. Put in oven proof dish, top with breadcrumbs (hm, obviously) and grated cheese, and bake until brown on top. Nice side-dish with sausages.

    Chicken noodle broth - which i've just had for tea.

    Poach some chicken chopped into strips with some chopped leeks, some carrots, some lime juice and anything else you've got to hand to throw in. Once the chickens done add some noodles (reduce the amount of water in the pan to just enough to cover the noodles- otherwise you'll have too much) and a chunk of creamed coconut. Add more lime juice if needed and coriander if you've got some fresh. Spoon into bowls, you can adjust the quantities of everything depending on how many your feeding. If you use precooked chicken and slice everything very finely you can get this on the table in under fifteen minutes.

    You can also add them to scrambled eggs, just fry them off for a minute or two before adding the eggs, and cheese on toast. They'll substitute for onions in cheese and onions tarts as well.

    If you still have a few leeks left over after all these suggestions, you could cut them into chunks and put in the freezer - I do this at the end of the season when our leek bed has to be cleared (soon now!). Then whenever I make stock in summer I throw a handful of these frozen leek chunks in.
