What to do with oodles of leeks?

Leeks and apple is nice.
Wash and thickly slice (1cm) the leaks and fry them gently in olive oil or butter or margarine or any frying oil for about 10 minutes. Add sliced apple about half way through. Season with salt, pepper and herbs of choice. I use basil mostly. Fry until the leeks are turning nicely brown but not yet burning. Don’t overcook or use too high a heat. Turn them regularly.
Serve with salmon or trout or anything you fancy.
I use Granny Smith apples and the acid taste contrasts with the sweetness of the leek. I have also used Braeburn apples which are sweeter and less acidic than Granny Smiths.
I have never tried Bramley or other cookers but they probably work too.0 -
I use them in place of onions if I find I have some over. As mentioned, I put them in cheese sauce but on top of broccoli and cauliflower to add more flavour. I recently used them instead of onions with salmon, sweetcorn and white wine in a white sauce and put a potato topping on for a fish pie. It was yum!!

I have tons of leeks too. Tried growing them for the first time this year. Like trees they are and very proliffic. I will be watching this thread too!

I also use them in fish pie this is my method ( I made up with help from here
)
2x portion fish fillets ( whatevers reduced! haddock usually!)
sliced potatoes
oil
medium pot creme fraiche
milk
leeks ( 2 or 3)
handful frozen peas
Peel & slice potatoes and parboil for 5 mins on med heat, then a splash of oil on baking tray, lay potatoes out & oven them ( 200) turn when they start getting crisp then remove
meanwhile
put leeks sliced in pan and lay fish fillets skin side down then cover with milk
on medium heat simmer - season with pepper
after say 5-10 mins the fish should start flaking
seperate flakes with fork & remove bits of skin
stir in fozen peas
after a few more mins, drain some of the milk out nd stir in creme fraiche
transfer to pyrex then lay the potatoes on the top
put back in th eoven for say 10 mins
serve.

I don't do much gardening anymore as my joints aren't as bendy as they once were .I still have a huge clump of Rhubarb at the bottom of my garden that grows very prolifically though. As it's far too much for me to ever eat up I donate it to the local sheltered housing at the bottom of my road.The warden there makes sure that her old ladies and gents that would like some can help themselves to it in the shared lounge area .I am happy that someone is eating it ,rather than it going to waste, and they are happy to get fresh rhubarb ,it's quite expensive to buy apparently .It's just a thought, maybe you could pass on some of your glut to someone who hasn't got a garden or would really appreciate it. If I lived close by I know I would ,leeks in Tesco's are around a pound a pound and I don't buy themvery often as I live alone and can't really justify it0

Easy savoury leeks .
Lay leek on chopping board and startiing and finishing 1 inch from each end cut right through, turn 90 degrees and repeat.
Stand the leek on its root end and press on the flag end and it will open up like a paper lantern, sprinkle dried or fresh sage inside.
I microwave for 3 minutes and then cover with grated cheese and finish under the grill .

Steam leeks until tender. Add olive oil and white wine vinegar to taste and allow to soak in. You can add mustard as well if you like - wholegrain is very fine! The taste great warm, but are even better the next day cold.

In the latest sainsbury magazine there was a Nigel Slater recipe for a leek and potatoe tart/pie.
I think it was boiled potatoes, leeks and cheddar cheese...wrapped in puff pastry. Now I've written it down it doesn't sound very nice but the photo in the mag looked very appetising, honest!weaving through the chaos...0 -
