What to do with oodles of leeks?

    if they still have the roots on ,you could stick em in the garden till you want them. Mine were out there till about february last year. Make slit in earth ,put in ,squidge earth to hold em up.
    Leek and bacon stew is nice.Put potatoes,chopped up leeks,barley and bacon in a big pan and cover with water.Cook it all up till pots are soft then thicken with cornflour.
  • I remember making cheesey ham leeks at school - par boil the leeks which have been cut in half, wrap the ham around them, put in a dish, cover with cheese sauce and bung in the oven!

    I also used up a leek last week, sauteed it off with some mushrooms and garlic.

    Good ol' leek and potato soup is an easy one too!

  • everyone keeps mentioning leep & pot soup. can u make this without a blender?

    If i made it in the SC, I could mash the Potato cubes on in the bottom using the masher to break it down. i improvised like this when I made curry with potatoes lol

    This is an absolutely gorgeous winter evening carb-fest. :D

    Fry off some smoked bacon bits and then add your sliced leeks and cook until soft. Add to a casserole dish full of well boiled spuds, pour over a good strong cheese sauce and give it a quick mix, top with grated cheese and bake until golden.

    what size are you having the Potatoes?
    you putting them in the Dish Sliced?

    Or is everything getting mixed up so it doesnt matter?
  • Hi,
    if you got a lot of leeks, you can freeze them and use them in later occasions. Just clean them, cut them in chunks (around 2cm length), so you cut the fibers and put them into a freezer bag. Each time you can take from the bag the quantity you need and put the bag back in the freezer.
    You can also bake a leek pie or quiche (try a recipe for onion quiche and replace the onions with leeks).

    Leeks, carrots and maybe onion, with stock and pearl barley in a slow cooker - very tasty and comforting :)
