What to do with oodles of leeks?

    I love leeks, wash and prepare them (as everyone else is recomending) i often steam them, or boil them til soft (not mushy!!!) and then i either pour on a cheese sauce, or make a pie!!!! For a pie i make the pastry, line the tin, add the leeks, a little chopped bacon and some beaten egg, s & p, cover with a pastry lid and bake, yum!!!!

    i prepare mine the same way, washed, halved and sliced and this week i am mostly enjoying them transformed into leek and butterbean soup :)
  • The tip about slicing them down the middle and washing them between leaves is invaluable. I couldn't stand leeks until I heard this tip about 15 yrs ago as they were always gritty, but this gets rid of grit.

    I've just bunged a load of chopped up leeks in a pan with some potatoes and stock and a piece of parmesan cheese rind - after cooking I retrieved the rind and then whizzed the vegetables up with the stick blender. Taste was fabulous, the hint of cheese made the soup just a bit different and very more'ish!

    It's a hint from Nigel Slater to use up left over rind.

    I poached a couple of chopped leaks in milk last night, very gently while the spuds were doing, and in the meantime grated a lump of cheese into a bowl and then stirred a desert spoon of cornflour onto it and stirred it about coating the cheese until all the cornflour picked up. This means that the sauce won't go lumpy, honest.

    Added it with about five minutes to go, had to add a bit of extra milk to thin it down a bit (but there really wasn't a great deal there to start with) and bingo. Very nice. This is the first time I've ever had a cheese sauce with leeks and I shall definitely be doing it again. Maybe I'll make sure I have some cream handy next time.

    Served with chicken (done whole in the SC) and is now on my list of "favourite meals"

  • I bought a few Ll on monday and wanna use them up but not sure what to make.

    Also in the fridge ive just opened a Jar of Tomato Pasta Sauce, only used couple of Spoon fulls

    I do have a 800g pack of Mince too, may be a bit late to use all of that today, as Id normally stick it in the slow cooker

    Any inspiration?
