What to do with oodles of leeks?

In oil and butter or better still bacon fat saute your leeks and then add finely sliced cabbage and fresh or dried sage and stir fry. Add potatoes cooked in their skins and lightly broken up .
Press hard into the pan to form a pancake. Brown on both sides or fry the bottom in the pan and then add cheese to the top and finish under the grill .
Serve on its own or with a dish of your choice . LUSH !0
