Try this older thread - oodles of leeks.
I make a pasta bake - cooked pasta, chopped crispy bacon, leeks softened in butter, cheese sauce.

Here's a nice and low-fat leek variation I made this evening. Apart from leeks you need filo pastry and goat's cheese.
Wash and slice the leeks and steam for about 6 minutes - drain. Take a sheet of filo pastry, put some leek in the middle, season with a little salt and pepper. Place two slices of goat's cheese on top. Fold the bottom end of the filo over the leeks and cheese, brush with a little oil. Fold the top over, brush with oil again. Same with left and right ends, so you get a square-ish parcel. Turn over and place on a lightly oiled baking sheet. Make as many parcels as you need in the same way (two for each person is nice for a starter). Bake in a medium (180°) oven until crisp and golden - about 10 minutes. Easy, and quite elegant!
note: filo is maybe a little flimsier than the 'brick' pastry I use here. If the sheet looks to thin, consider using a double layer (brush the bottom sheet with oil before placing the second one on top)"Remember that many of the things you have now you could once only dream of" - Epicurus0 -
I'd make either potato and leek gratin with creme fraiche or bacon and leek pasta bake with creme fraiche (my H doesn't like cheese sauce so I tend to use CF as a quick alternative).

I always bung a bit of grated garlic in leek and tattie soup to liven it up a bit, or sprinkle some chopped herbs if you don't like garlic .The farm shops usually do packets of Italian or Provence herbs for about 60p and they go quite a long way.just a teaspoon or two is usually enough0

leeks in cheese sauce instead of cauliflower are great as a side dish with meat...my late sister used to roast hers with the sunday joint...very nice...

Place leeks on chopping board and starting 1 inch from the root end cut right through and stop 1inch from the flag end, rotate 90 degrees and repeat .
Press from both ends and they will open up like a paper lantern, sprinkle fresh or dried sage inside. Cover with cling film and microwave on full for about 3 minutes, place on a tray and liberally cover with grated strong cheese then grill till the cheese bubbles and turns brown .

My dad has an allotment and has brought a huge bag of leeks around for me...... what shall I do with them all?
Any ideas for leek-y recipes?
Can I freeze them? Do they need any prep before going into the freezer?
