What to do with oodles of leeks?

    I parboil the leaks to soften them, drain them, pop them in the oven with cheese sauce and sometimes top with grated cheese. Sometime I 'poach' them in a vegetable stock (marigold vegetable bouillon).
    Could top with breadcrumbs, parmesan whatever...

  • Have big bag leeks, for only 2 of us. So far have made
    1) leek and potato bake (in cheesy sauce)
    2) recycled leftover bake into bubble & squeak
    3) added leek to stir fry veg rice
    4) leek just as a plain veg
    5) chicken and leek pie

    Bored of leeks now. Out of recipes. Most on-line seem to be a variation of the above, or some sort of 'leeks in cheese sauce' which doesn't appeal.

    Some of them will go into soup (along with all the tougher ends from above meals already saved) but rather not make too much at a time as freezer space quite limited.

    Any other ideas for the rest? Probably another 2 meals-worth. I'm feeling leeked-out.

  • my favourite thing to do with leeks is julienne them and slowly fry in butter. great with roast chicken. you can alwasy add blue cheese to the pan too :)

    they don't go 'squeeky' like this. boiled leeks = yuk

    I looooove leeks! Add them to mashed potato as the topping for a fish pie (or in any mashed potato situation, really). Slice and gently fry them before arranging them on top of the mince mixture in shepherd's/cottage pie, so there is a layer of leek between the mince and the mashed potato topping.

    I might not be the best person to ask as I love leeks and would have them steamed as a plain vegetable every day of the week!

    I have successfully frozen them (chopped up) for use in soup before, if you really can't face using them up. Use them in place of onions in any soup.

    Leek & bacon risotto?

    Leeks part cooked in microwave, then wrapped in ham/parma ham & covered in grated parmesan & fresh breadcrumbs then popped into the oven to finish off?

    Braised leeks - cut into 2 or 3 pieces, put into ovenrpoof dish, dot with butter & season, put 1/2 cup boiling water in & cover with foil. Stick in the oven when cooking Yorkshires or towards the end of cooking roasties - delish!

    Also, slice some up & put into a bag in your freezer, then you can just get a handful out when you want them to throw into something else ;)

    chop them up into rings and freeze them. Assemble them into rolls and freeze them = hardly any space taken up

    Then use them when you're not leeked out.

    I was going to say add them to mashed potato (soften the leeks in butter first, with garlic if liked)
    Make a lasange with leeks & bacon/ham in cheese sauce between the layers.
    Add them to any stir fry veg & serve with noodles, or in a tomato sauce for pasta.

    If you really are sick of them though, freezing them as above is a good idea.

    I make a sauce for spaghetti with sliced leeks, garlic and sliced chestnut mushrooms. Fry them off, add double cream and grated cheese and bring to the boil. It's lovely and makes a change from bolognese.

    or I cook lamb shanks on a bed of carrots, parsnips and leeks in stock.

    I understand if you were given the leeks or got them really cheaply. Personally I buy frozen leeks from Farmfoods, £1 per kg all chopped and cleaned.
