I usually freeze them chopped but not blanched as I find they are a bit soggy when cooked if I do.

Def make loads of stock - you can freeze it and then always have it for soups/risottos etc...0

Did a late night shop last night (on the way home from the Bristol meet - :wave: Hi everyone!) and got six packs of leeks for 10p each, well it is St Davids day today:rotfl: .
Problem is, what can I do with them all? I will make leek & potato soup and leek & butterbean bake - but will still have some left over. I don't have much room in the freezer but could possibly squeeze a few in there - can I just slice and freeze them?
Any ideas gratefully received.

I just wash, pat dry, slice and freeze on open trays (to stop them from all sticking together) and then bag them up. I like to keep the dark green bits (for in stews) separate from the pale/white bits (for soup/serving as a veg).0
