What to do with oodles of leeks?

Chop up into quarter inch disks, pan fry in butter until soft, then mix into mashed potato with some grated cheese0

Make veg risotto, chop leeks, carrots and celery, sautee in some olive oil, then add risotto rice, stir together and then add a half cup of white wine. Once wine is absorbed add hot stock (vegetable, or chicken if you are not vegetarian), a bit at a time and keep stirring and adding hot stock until rice is nice and cooked, but not too dry.
Add loads of grated parmesan and pepper to taste.

Also good steamed with fish and any other veg you fancy in a big paper parcel in the oven - add lemon and pepper (or cardamon - which is gorgeous). If doing potatoes you might need to cook them a bit first or do them seperately for longer.
In fact leeks are good full stop - always find myself skipping round the kitchen when theres a pile in the veg box.
Edit - i fogot goats cheese risotto with leeks - fry them off, stir in the rice to coat in the oil and then cook as for a standard risotto - stir in some goats cheese just before serving. Will stop now.April Grocery Challenge: £250/£127.530 -
Forgot to add: don't throw away the hard green leaves or the carrot tops, very good to make veg stock (boil up all the veg cuttings, strain, compost the solids and keep the stock for soup/risottos etc).

Leek and tattie soup,mmm lovely this weather to keep warm with.I freeze it as well for later, very filling with some crusty bread0

I chop up and freeze and use from frozen to make leek & potato soup..yum yum. I also use from frozen in anything instead of onions ie spag bog, curry etc (i have loads left from my allotment and don't like to waste them).0

I love leeks just steamed as a side dish, very easy and simple to do but delicious.0

Boil the leeks with potatoes and use to top a shepherds pie. Sprinkle the topping with grated cheese and cook in the oven.What goes around - comes around
