I did a search in OS on leeks and there are three older threads about leeks which includes advice on freezing them and also several recipe suggestions

Fry 4 leeks gently till they soften, add a tablespoon of lemon juice. Cook some butterbeans, drain, and add them to the pan to heat through. Serves 2-ish. Very inexpensive if you buy butterbeans tinned from Aldi/Lidl or similar.
Makes a lovely accompaniment to all kinds of sausages and a nice warm salad.

Many thanks I've now got two lots of soup to go in the freezer, frozen some of the leeks raw and than gently fried some and put them on toast sprinkled cheese on the top and grilled lovely. Still got a few left so I will check out some of the other recipies tomorrow.0

Potato and leek soup?
Personally I'd slice and boil/steam them, mix with white sauce or cheese sauce, add more cheese and breadcrumbs to the top, and blast in the oven. Yum.Nelly's other Mr. Hyde0 -
IM having leeks later, I love putting them in fish pies.
Take fish fillets
creme fraiche
sliced leeks
onion chopped
frozen peas
Sautee leeks and onion off in a bit of milk, then when softened lie fish on top and put on low heat. Shortly the fish should start flaking ( take skin out if you like at this stage)add frozen peas and creme fraiche stir.
tranfer to oven dish, add your potato topping. and cook on 200 for about 20 mins
JOB DONE! SCOFF! the leeks go lovely adn sweet in this.
Someone suggested using leeks shredded with duck & pancakes the other day, did this it was lovely, much more oniony than spring onions.- and cheaper too!)

I'd do leeks sauted in butter, add small amount of vegetable stock, add creme fraiche and serve over chicken marinated in lime juice. This is even better when eaten with cubed roast or sauted potatoes. Not one for the weight-watchers though!0

you can make a quiche. Use puff pastry or any crust you like and fill with leeks, cut in rings, softened with butter or oil, add grated cheese, a couple of eggs, cream or milk, 1 or 2 tablespoon flour to thicken, black pepper and bake in the oven at 175° for 45 min to 1 hour. check form time to time if it's done.0
