Get some beef bones off the butcher, he'll possibly give them away. Boil them in 4 litres of water with
2 star anise
5 green cardomom pods
1 cinammon stick
1 onion
1 inch knob ginger
(take the onion and ginger, quarter without peeling and grill until the skins are black- sounds weird but tastes amazing) then add.
2 tbsp fish sauce
salt to taste
white pepper
as much briskett as you want.
Simmer for 4 hrs, skimm occasionally, then remove brisket and slice or shred. It'll be soft as anything.
Cook some rice noodles seperatly, lay in the bottom of a large deep bowl. Lay some briskett on top, also some very finely sliced onion, beansprouts, chopped mint and coriander, chopped chillies and a wedge of lime and pour over the boiling soup.
It is IMHO the best soup ever and it's cheap peasant food, as long as you don't waste any of the other ingredients you buy like the beansprouts. If youve some leftover have it for breakfast like the vietnamese do! Nothing like some chilli in the morning!0 -

Hi all,
I have a beef brisket that I need to get cooked, I was hoping to do it in the slow cooker. What should I put in with it? Also how long should I put it in for.
I have some root vegtables, a couple of peppers etc. Not got many spices or that - was hoping not to have to go out to the shops for anything else. I don't have any stock either :-( Although I do have some stock cubes and a couple of tins of condensed soup.
I'm not much of a cook so you'll need to be very basic

What we do is just cook the brisket in the slow cooker with some onion and herbs - rosemary usually and a little water . Then do your root vegetables into a roasted vegetable dish in the oven (just peel , chop up and add a little oil ) = a yummy roast dinner! Make the gravy if wanted for the stock of the bef after the fat has drained

Sounds delicious, how much water do i need? About 1 inch from the bottom?
Also, do I use cold warm or boiling water? I don't have any rosemary - I do have some
dried herbs, can I use them and if so how much should I use?

Yes about an inch off the bottom - warm water - so you don't crack the pot. About 1 tsp of dried herbs sprinkled over the top.

If you are slow cooking brisket seal it first. ie put brisket ends in a fryinging pan with fat to seal in the juices etc.
I also use pearl barley and split peas to thicken up my stew when done in a slow cooker.0 -
Put some veg in a roasting tin. Have some carrots in the middle of the tin. Put the brisket on the carrots and sprinkle some oxo cubes and herbs over it. If you put some potatoes around the carrots and then put a bit of water in the tin not too much though just enough to cover the bottom of the tin. Then the juices from the brisket will on the potatoes and you will have some nice roast potatoes as well as you brisket and roast veg.
