    Good stuff.

There's at least one other brisket thread with ideas about, so when I get a couple of minutes I'll have a look for it/them and do some merging. :)

Heheheh, not daft were they, our old mum's ;)

This is one of the reasons I'm so grateful for this board as it reminds me of everything my mum used to do for us when we were younger, and something I want to re-introduce into my own kids' lives.

My father was the sole bread-winner for most of our lives (mum got p/t work once we were all older and not so dependant on her) and he didn't have a fantastic wage but we never went without in the sense that there was a cooked meal on the table every day, clothes on our back (even if they were hand-me-downs) a roof over our heads (owned not rented) and a warm clean bed to sleep in :)

I was out earning my own money (or free milk/meat/produce for the family) on the local farms from the age of 12 onwards and I loved every minute of it. Kids these days don't know they were born and i often fear for their futures in the materialistic consumer-driven world we live in today.

My youngest actually had me in tears last night, as were discussing the new regulations that will be coming in to force everyone back to work regardless of illness/disability (he's very mature for his age and we talk about lots of stuff) when he turned round and said "well I'll be 13 soon mum so I can go out and get a couple of jobs to help you out if you can't manage to work full-time" ... bless him :o

    Hi all,
didn't want to hijack any one elses thread so i though i'd just start my own

I was a very good savvy shopper at the weekend and my whole shopping bill came to £30 this included my meat from the butcher :money:

i brought a nice roll of brisket and cooked it yesterday in the slow cooker for 7 or 8 hours and it was lovely, but now i have half of the joine left.

Some of it will be used in sandwiches for work for me and my b/f but i have a couple of questions i was wondering if you could help??

    1. if i make sandwiches (probably with onion and mayo) will they freeze ok and does the bread / mayo go all watery and horrid?

    2. could i make some sort of pie (i.e the guinnes one form the recipe thread) as this would involve re-cooking the meat, would this be ok if it's already cooked.

    3. when should i throw away the uneaten meat, it was cooked yesterday afternoon but how / where / how long to store it for is a big concern for me.

Sorry to be a pain, thanks

    :A

    Hi,
    1. Mayo doesn't freeze well. Apparently it goes disgusting when it defrosts.
    2. Yes. You can re-cook cooked meat, for example in a pie or curry etc. How about chopping some of the meat, & an onion, perhaps some carrot or peppers etc, pour on some cambells condensed soup (chicken in white wine sauce is nice) Heat thoroughly, top with mashed potatoes & put into the oven to brown.
    3. Preferably never! Cold meat will keep in the fridge for about 3 days or so. If you aren't going to eat it in that time, freeze it. If you slice the meat & freeze the slices on a baking tray before bagging them up, you will be able to take out just the slices you need for sandwiches.

Mayo is best kept in a fridge. There are a couple of special recipes out there that will allow for freezing but they're pretty yucky even so.

You could keep your sandwiches as advised earlier and simply the add mayonnaise on the spot.

    ...

Kids these days don't know they were born and i often fear for their futures in the materialistic consumer-driven world we live in today.

It's funny tho, one of the things I remember thinking from a very early age was "why do people who are probably poorer than us always seem to have better stuff"?

I grew up in a 1-income household with a stay at home mum who was very oldstyle from the start - cooking, home-growing veg, dressmaking, budgeting every penny - but we were what you would call middle class, my parents were both graduates and my dad earned what must have been a reasonable living wage as an IT specialist.

So it used to puzzle me when my parents couldn't afford things, when people at school whose parents were unemployed/in poorly-paid jobs always seemed to use branded food products, wear the latest gear, go to Spain on holiday (we usually went self-catering in Scotland) and have birthday parties at McDonalds/the leisure pool etc.

It took me years to appreciate the fact that my parents had a huge mortgage and minimal other debt, and were putting every penny they had into things which actually mattered.

It also took me a while to realise that parents' supply of money was finite - I mean, when you're 6 and you say you haven't got any money you mean you LITERALLY don't have a penny in your pocket, whereas mum and dad can just go get some out of the cashpoint when they run out :D

    OK.

I've merged a couple of Brisket threads into this one - and all the old posts get joined in by date order. So for more recipe ideas and a couple more tips on using leftovers... you'll have to start again from the top :)

Was out of my area today and found a butcher selling locally produced meat, picked up a piece of rolled brisket for £1.99 instead of £4.69. He said if it doesn' sell over weekend he reduces it and assured me it wasn't off!! It is cooking now so if I don't post again you'll know I've been poisoned.

:T Bargain!!! Cook it loooong and slooooooow - you'll be fine :D Enjoy your bargain meal, keep his address (he might be worth popping back to for bargains on a regular basis! Once he gets to know you as a "familiar face" .. who knows what other tempting delights he'll offer!).

Hi Queenie I've bunged it straight in the oven with some water an onion and some mustard. I've put it on 150C for the first half hour what should I cook it at for the rest of the time I know it'll need a couple of hours, I've also covered it with foil.
