It would probably be OK in a mixed veg soup, too, if it's just a case of using up excess cucs, though I don't know if you'd be able to taste them if they're mixed in with stronger tasting veg.Back after a very long break!0 -

i love a thick minestrone - onions, garlic, smoked bacon - sweated off with some celery, add carrots, cabbage, and other veg you like/ need to use - all finely diced. Add tinned toms and cook til everything is soft. Add pasta and a tin or cannelli or borlotti beans and cook til pasta is done. I love with a slug of chilli oil and a grating of parmesan on top.

I like to make soup out of leftovers! and as I make a lot of roasted veg, any leftovers get put in the freezer. and its the simplest soup on earth to make!
I normally wait until I have at least a good bagful (think about the quantity of a pot noodle pot full). then I simply defrost add a good two potfulls of chicken stock - homemade is best but use stock cubes and water if you dont have any. simmer for ten minutes and blend until its the consistency you like. taste and add any seasonings you think it needs! serve however you like it - but a nice crusty baguette or roll or even croutons turns it into a meal!0 -
my speciality for the last few years has been Baked Potato Soup - I discovered it in the US a few years back and had to find a recipe immediately. It's real comfort food and not for anyone on a diet but I could live on it when it's cold weather
To be honest when hubby and I have it along with some fresh bread it's a meal in itself so we tend not to have another course - or maybe just a small scone if we are being utter piglets:D

Can anyone point me int he right direction on here for recipes for winter soups & cheap warming pasta dishes??
I have only ever made 1 soup in my life & that is leek & potato & DH hates ot. Its like wall paper paste he says. Only cos I love it think & gloopy!:rotfl:
