Leek and Potato Soup
1 leek
6 med potatos
1/2 milk and 1/2 chicken/veg stock
tbsp oil
Fry leeks in oil till soft. Add potatoes to oil and fry with leek for about a min or 2. Cover leeks and potatoes with mixture of half stock and milk. Boil till potatoes soft, blitz in blender or with hand wand blender thingy! Season to taste and serve.0 -

I love L&P soup. My variation is that I add a small onion and use 2 leeks for extra flavour.

I have just made one with stock, sweet potato, onion, chickpeas, spinach, coconut milk, thai spices and red thai paste and lime juice - oh and a pinch of dried ginger. Sounds a bit odd, but tastes amazing!
I also like leek and potato soup with blue cheese melted into it
And I make a quickie soup with stock, onions, garlic, crispy smoky bacon, mushy peas, frozen peas, onion and a dash of cream
And a creamy cauliflower soup using frozen cauli, garlic, onion, stock and blue cheese, with some nutmeg grated on top
Oh and one with stock, onions, garlic, roasted red peppers, lentils, butternut squash, celery and whatever other bits I have lying around.
Can you tell I am a huge soup fan! I can't offer exact recipes though, as I make them up as I go along0 -
Veg & Pulse soup
1 packet of cassarole veg mix(£1)
1 tin toms (.33p)
veg stock
Mixed pulses (Cassarole mix ) I just go by eye pre soked
Beans of choice (harricot, cannaloni, butter beans what ever you have)
oil
nob of butter
salt and pepper
1. heat 2 tablespoons of oil and a nob of butter in a largish pan,
2. tip in veg and turn down heat to low and sweet veg for about 5 mins
3. add the tinned toms, veg stock salt and pepper and lental mix simmer on low
untill the veg is soft.
4. then I remove some of the mix then blitz the rest,put back the saved mix and
add the tin of beans of your choice and simmer until the beans are heated through.
This is delisious we have it at weekends for four of us and there is always enough
for myself and my daughter to take to work on a monday and very,very cheap to make

I have loads. An easy one:
Tin tomatoes
Veg, or HM chicken stock
1 Courgette
1 or 2 Carrots
cumin
chilli powder
allspice
garlic
seasalt, and black pepper
Fresh Basil, or Coriander0 -
Roast tomato soup.
Cut a pile of tomoatos in half and put in a roasting tin, throw in a few cloves of garlic, (I like a whole bulb) add basil, thyme, salt and pepper, a sprinkling of brown sugar and toss it all in olive oil.
Roast for about an hour and then scrape it all out into a pan with some stock and blitz it.
I quite like adding a chilli or two, or a pepper if i have one. I did have a proper recipe for this but it has been lost in the mists of time and now I just throw it all together and a bit of this n that until it looks good!0 -
Very Speedy Tomato & Bread Soup
Couple slices stale bread ripped up
Onion
Garlic
Few chopped fresh tomatoes
Tin of chopped tomatoes
Olive oil (the more you use the tastier it is!)
Fry off the bread until golden in some olive oil. Remove from pan.
Fry some onions, add garlic (and a little chilli if you like)
Add all the tomatoes
Put bread back in.
Bubble for a few minutes and serve!

I do a tomato and basil one that always goes down well although it does use a lot of tinned toms.
3 tins of tomatoes
3 carrots
3 sticks of celery
1 onion
1 pint of veg stock
seasoning
Sweat off veg, chuck in toms, seasoning and stock and bring to boil then simmer for about 20 mins. Chuck in basil and cook for a bit longer. Blend when cool.
Also did lentil and bacon last week.
1 pack of bacon lardons
1 onion
2 sticks of celery
2 carrots
1 1/2 pints of veg stock
150g red lentils
Black Pepper
Cook bacon then chuck in veg and sweat. Chuck in stock and lentils. Bring to boil then simmer for around 40 mins. Blend when cool.
You will note that mine are of the chuck it in variety:)0
