My new favourite is slimmimg world speed soup-supposed to help speed up weight loss.
1 tin chopped tomatoes
1 tin baked beans
1 tin bean salad
1 tin kidney beans ( i like the ones in chilli sauce)
1 leek
2 carrots
1 parsnip
1 onion
Handfull lentils
2 beef stock cubes
Mixed herbs
Chop everything up and cover with water. If onky just covered then soup is very thick like pureed baby food so i use a good amount of water. Simmer until veg is soft then blend it.0 -

We don't usually bother with the borlotti beans. I make soup with any bits of veg I have lying around. I made a leek, broccoli and celery soup yesterday. Same principle as the leek and potato soup.
1 leek
About 5 sticks of celery that had definitely lost their crunch!
2 heads of broccoli that were looking a bit sorry for themselves
4 med sized potatoes (peeled and cut up into small chunks)
Fried the leek and celery in about a tsp of oil. Let that sweat for about 4 mins on a low heat. Added the broccoli and let that sweat with the leeks and celery for a further min or so. Chucked in the chopped up potato and let that sweat for a min. Added milk and stock (made with Sainsbury's basics chicken stock cubes) enough liquid to cover the lot. Let it boil till the potatoes were cooked, then blended the whole lot. Added the seasoning at the end. Yummy and cheap.
I make soup with loads of veg. I do one that's grated potato, carrot and onion cooked with beef stock cubes. Easy and cheap. I also do a spicy root veg soup, carrot, parsnip, swede, onion and potato with a bit of cumin and chilli. Same principal as before cover with stock and milk till veggies cooked, blend and season.
You can pretty much make soup out of anything, I tend to use the veg and potato method a lot because it's so simple. Onion and potato soup is good too and really cheap to make.0 -
I always add dried chilli flakes to my homemade soup - really nice with butternut squash & carrot or leek & potato.0

Roast beetroot soup
We have LOTS of beetroot on the allotment... this is surprisingly yummy and sweet.
Roast beetroots whole, without peeling in the oven with some thyme and oil.
Cool and peel.
Fry an onion in butter until soft. Put onion and beetroot into the food processor and blitz. Add good chicken stock to required thickness.
Heat and serve with creme fraiche or feta and snipped chives.Well behaved women rarely make history.0 -
Anybody got any suggestions for soup recipes that I can freeze? I already made Borscht and carrot and coriander but would like to add another easy, cheap soup to the freezer.
I love root veggies, am not vegetarian though, and wouldnt mind a tomato based soup (as long as it wasnt all toms!). I can slow cook or blend any soups.

Potato & Leek - this is particularly nice if you use home made chicken stock (stock using chicken bones/carcuss)
Tomato & Lentil
Mushroom - useful when you get a large box of mushrooms on the reduced counter at the end of the day!0 -
I swear by the following versatile soup recipe:
1 large onion
3 medium carrots, diced
1 medium potato, cubed
250g red split lentils
500g of any vegetable(s)
any herb/spice you like.
1.5-2ltrs veegtable stock
Some of my favourites are, parnsip and curry, red pepper and paprika, pea and sweetpotato, sweetcorn and tomato and basil. But you get the picture there's huge variety. This yields about 5-6 servings.0 -
I like lentil and ham particularly if you make it with the stock from boiling piece of ham. It doesn't need much ham (can use bacon and a stock cube) to get flavour.0
