    Well, if you want "light", how about Egg Flower Soup? Basically, it's chicken and sweet corn "egg drop" soup, minus both the chicken and the sweet corn.

    The recipe isn't on my SkyDrive, so I can't post it right now. I will try to remember to post it and upload it when I get home. If I forget, PM me to remind me.

    Me and my mum make a lolvey low fat spicy tomato soup.

    Tin og chopped tomatoes
    Some tomato Juice
    Garlic
    Cayenne pepper
    1 veg stock cube

    Cook in a pot and then blitz (i dont normally bother tho)

    It sounds very basic but its to die for and the cayenne pepper adds a good bite
    We are all in the gutter, but some of us are looking at the stars

    Debt free on 1st Sept 2011...what a journey!

    This is one of my favourite soup recipes - cheap to make and low in fat so good for dieters:

    Tomato, Lentil & Basil soup

    2 oz red lentils (no need to pre-soak)
    800gm Passata (well priced at Aldi)
    Half pint Veg stock
    1 large onion, chopped
    3 cloves garlic
    2 tsp dried basil.

    Simmer all the ingredients together for about 45 mins. Cool slightly and then liquidise.

    And here is another of my low-fat soup recipes - it tastes so creamy you would expect it to be high in calories but, as long as you stick to low-fat soft cheese, it's not!

    Red Pepper & Soft Cheese Soup

    1 lge onion chopped
    2 red peppers, chopped
    2 celery stalks, chopped
    1 carrot, chopped
    1 tbs paprika
    2 veg stock cubes dissolved in 1 pint of water
    7 oz (200 gram) tub of low-fat garlic & herb soft cheese (I use Philadelphia if on offer, or if not then Morrisons own)

    Sweat the onion, red pepper, celery & carrot for 5 mins over medium heat. Add paprika and cook gently, stirring for 1 minute. Add veg stock, bring to the boil and simmer for 30/40 mins. Liquidise till smooth, then add the soft cheese and blend a further 15 secs. Delicious!!

    Can anyone point me int he right direction on here for recipes for winter soups & cheap warming pasta dishes??

    I have only ever made 1 soup in my life & that is leek & potato & DH hates ot. Its like wall paper paste he says. Only cos I love it think & gloopy!:rotfl:

    Pea and Ham. Lentil and Veg. Curried Parsnip. All good winter warmers. If you do a google search theres loads of recipes. Happy soup making.

    How about combining the two and making minestrone soup? My way of making it is to fry chopped bacon (cheapy stuff is fine), chopped onion, finely chopped carrot and chopped garlic until soft and golden, then throw in a can of tomatoes, fill the tomato tin with water and throw that in too, add a pinch of dried herbs and some seasoning, then simmer with the lid on until the veg is very soft. Add a handful of mini pasta shapes (or big pasta shapes / spaghetti broken into pieces) and simmer again until the pasta's cooked.

    Ladle into bowls and sprinkle with grated parmesan and some more black pepper. :drool: With some bread to dip in it it's a meal in itself. (If you're vegetarian then leave out the bacon and use another cheese on top.)

  • Can you make a soup from cucumbers? We have a bit of a glut of yellow knobbly ones at the moment.
    Normal people worry me.
  • One of my fave cheap warming pasta dishes is sausage pasta, I just guesstimate the quantities but you need:

    Value pasta (I use penne, cheap as chips!)
    Value chopped tomatoes
    Onion (cooked slow in fry lite so it caramelises yum)
    Any veg that is reduced and needs using up e.g. Mushrooms, peppers, baby corn, I've even used broccoli
    A stock cube (beef, chicken, whatever I've got in)
    Fresh garlic clove, salt, black pepper
    Reduced/bogof sausages cooked first with the onions then sliced
    Value cheddar or any scrag ends of cheese you've got kicking around melted on top
    If you cook it for long enough you probably won't need to add tomato paste

    Yummy with garlic bread but also yummy by itself!

    If you're vegetarian you could substitute a veg stock cube/bouillon, and use chickpeas and quorn maybe? But I can't vouch for the taste as I've never tried it that way.
