    Thanks Zippychick - I might try adding some pasatta to see if that helps :) Unfortunately I'm all out of stock and we're just back from hols so veg is the grand sum of 3 spuds :rotfl:

    With regard to the quorn mince, I made a veggie shepherds pie with leftover nut roast and some quorn mince at Xmas - it was more of a 'chuck together' job but if you want the nut roast recipie then feel free to pm me :) I just crumbled it up and then added some quorn mince to it.

    Yes can you pm me the nut roast link? I don't know if that would be to his tastes, he's a strange one!

    What have you done with your soup then? If adding more liquid i would tend to add more lentils.

    Rinse 1/4 pint each of red lentils, yellow split peas and dried marrowfat peas (dried butterbeans too if you fancy). Put 1 pack of cooking bacon/bacon pieces into pressure cooker & cover with water. Cook under pressure for 15 mins. Meanwhile grate 1/2 swede and 3 large carrots and slice up a big leek or 2 small ones. Add everything to the pressure cooker along with a vegetable stock cube and add more boiling water to cover (mix shouldn't be too thick, you should be able to stir it easily) and cook under pressure for another 45 mins. This soup will thicken beautifully as it stands so preferably make it in the morning to eat at teatime. Makes a cheap filling meal that satisfies even the hungriest appetites ;)
    Feeding 2 adults and 5 piglets aged 7 months, 7, 8, 10 & 13. Thank heaven for Aldi!:rotfl:

    Zippy - I will dig out the nut roast recipie and pm it to you - I bet your OH odd eating habits are nothing on my OH's lol!

    Atm I've just portioned up the soup - I had another taste last night when it had cooled a bit and it seemed a bit better once I'd blitzed it a bit. Going to take a portion to work tomorrow with some sun dried tomato bread I dug out of the freezer and see how it tastes. It's not totally inedible thank goodness.

    I was inspired to have a go at making some soup. Looked in my vegetable drawer, and all I had was some potatos, 1 x sweet potato and some onions. Chopped them up small, added salt, pepper 1 pint of vegetable stock and a handfull of 'Ebley' a kind of dried wheat alternative to pasta, which I had lurking in the cupboard.
    Bunged them all in the slow cooker for 5 hours. Took a hand-blender to the pot to smooth the chunks and the result was handsome!!!:j
    I am so proud of myself. I shall serve it for lunch with buttered bread, and freeze the leftovers for snack/lunch at work.

    That sounds good. You've inspired me now to chuck some soup in the SC today. Will have a root around and see what veg are lurking!

    well done, if you'd had a tin of chopped tomatoes and sprinkle of basil that would've been good.

    Never used the ebly, will look out for it, I use buckwheat, it's a good thickener, and healthy too.

    Yes, my soup turned out a treat!! Smiles all round.
    I worked out there was about equivalent to 3 x tins worth. Evan working it out on £0.50 a can, I have saved myself £1.50, made a healthy low salt and no additives meal, and used up vegetables which may have ended up in the bin, as there was not enough of them to do anything else more substantial with them.

    After reading this today, I made a lovely butternut squash soup with chillies from a bag of frozen squash I had at the back of the freezer. It was nom (have just had for lunch). There is enough for lunch for a couple of days left. Made croutons out of the end of a HM loaf of bread from last week.
