The most economical soup I've made, was made out of loads of manky vegetables lurking at the back of my fridge after Christmas.
I cut off any mouldy bits, and chucked it in my slow cooker with some HM chicken stock. There were all sorts of different veg, and it tasted delicious.0 -
dunno whether this counts as free soup, but if I do a tray of roasted veg and there is some left over I often just bung it in a saucepan, pour over some homemade chicken stock to about an inch or two above the veggies and bring to almost boiling point. salt and pepper it and simmer gently for ten to fifteen minutes. whiz with the stick blender and you get a thick flavourful soup. (the taste depends on the veggies used but I do love the butternut squash and sweet potato with garlic one!)0

I want to make a soup of sweet potato and butternut squash. OH hates these vegetables as he finds them too sweet (same with tomato based dishses and anything with peppers in) which is a bit of a nightmare for me at the moment as I am on a diet and am getting as much veg in as possible, besides I love those vegetables and anything mediterriany, which he doesnt.
So I want to make a soup of these 2 things, but have a sort of sour or savoury taste to it. Am happy for it to be curry flavoured or whatever, just not too sweet.
Any ideas?
I make a roasted red pepper and sweet potato soup , or butternut squash and bacon ( small bits of smoked bacon , or pancetta sweated off with the onions ) ........smoked paprika , especially the sweet one , rrally adds something to these soups tooVuja De - the feeling you'll be here later0 -
I spent ages trawling through this thread and the links attached to it, and enjoyed every bit of it!
I have been trying to create a soup which is healthy (OH trying to loose weight), easy peasy, quite cheap, really tasty and with no lentils or such things as OH is more than slightly phobic of such things after his veggie mum cooked lots with them when he was small:rotfl:. Forgot to add, all the fresh bits were reduced but I plan to just use what ever healthy veg I have in the fridge/feezer.
So here's what i created today and it was delicious!!
Choritzo Soup.
-Pack of Choritzo Sausage peeled and chopped up (I'll use half a pack next time
-2 red onions roughly chopped
-3 large cloves garlic (we are garlic fiends)
-3 peppers roughly chopped (I used 2 green an a yellow as thats what I had)
-half a small cabbage roughly chopped
-pack of smart price pasatta
-1 and a bit litres of stock, I used half veg and half beef-just oxo)
-Black pepper, splash of Lea n Perrins, some italian mixed herbs
-Reserve to one side-finely chopped carrot, pepper and some french beans, and half a tin of sweetcorn.
Fry the choritzo, onions and garlic gently in fry-light, then remove the choritzo once the flavours have mixed up a bit, put this aside in a bowl.
Add the other chopped veg and a little boiling water to stop it burning and the pack of pasatta, simmer with a lid on until the veg are soft.
Blitz with blender, add the stock, seasonings, Choritzo and the finely chopped veg and simmer until they are a bit tender (we like them crunchy!)

And I think (?) the only naughty bit was the choritzo0 -
I need to loose some weight so I'm going to try eating a light soup at lunchtime. I can make hot & sour soup, Tom yum soup and chicken & sweetcorn broth.
Does anyone have any 'light' soup recipes which they don't mind sharing please?

Today I made a giant pot of watercress soup, I haven't added quantities as I tend to cook by eye. What I did was...
Sweat off potato and onion in a tiny amount of oil and butter.
Add stock and milk and cook until the potato is softened.
Throw in the watercress and season with black pepper.
Once the watercress has wilted whizz with a stick blender.

Just remember that if you want the soup to be 'light' go easy on the oil, butter and cream.
I'll add your thread to that one later once you've had some more replies.

Butternut squash and apple soup:
Saute an onion in frylight (frylight is great but needs a lower temperature than oil or butter). Add a peeled and chopped butternut squash and two peeled and diced granny smith apples. Saute another couple of minutes, then add about a litre and a half of veggie stock. Add a teaspoon or so of mixed spice also (the kind with cinnamon, nutmeg, etc). Boil until the vegetables soften, then blend with a stick blender. Taste and add a tiny bit of sweetener if you wish, and salt and pepper. Gorgeous.0 -
I make veg soup literally onion, carrot, swede, leek, any veg you fancy with some veg stock blended. Yummy!
The only other soup I make is sweetcorn based, onion, carrot, leek and frozen sweetcorn with chicken stock, blended - it goes quite thick and add in chives. It really is amazing! Quite sweet though. Parsnip and apple is wondeful I slice up in chunks a peeled cooking apple and a few parnips peeled and chopped up in chunks and cook them in a litre and a half of stock (made with stock cubes if you haven't and of your own)once cooked and softened I whizz in my food mixer until thick.return to the pot and stir and bag up in soup bags of half a litre at a time for freezing when cold .Half a litre will do me two days as when I come to warm it through because its quite thick I add a little water to it to thin it out a bit .Sprinkle some grated nutmeg on top and its beautiful.no idea how many calories but it can't be many as there is no sugar (apart from a tiny bit in the apple, yet it tases so good and is as cheap as chips .If you can buy the parsnips reduced its a great way to use them up as it doesn't matter if they are a bit wrinkly or bendy Soup is very forgiving for 'past its best' veg0
