Has anyone got any ideas as to why my bread is heavy at the bottom?? I have tried less water, and using half and half flour which has made it better but it is still the same. I tried a sundried tom and parmesan ready mix yesterday and that came out perfect so I know its not the bm.

    Thanks in advance

    Anyone????

:T :T :T yeah the paddle can be a pain .... sometimes it comes out straight away and sometimes you have to really dig around for it ....

The cheese and onion is a ready mixed packet thing. Can't remember the make. The paddle didn't get stuck in the bread but left a hole when I turned the bread out. Actually I couldn't get it out of the pan, so just washed the pan with it still in and then started on the cheese and onion :D

Went to Tesco yesterday and asked for some fresh yeast at the bakery dept. The chap told me it was free and he was allowed to give me 100g. So came home to make a wholemeal loaf. At 3.30 started the yeast off in a jug with warm water and sugar, (he gave me 200g !) Twenty mins later threw the ingredients into the bread maker setting it on basic white. By 4.45 the bread had risen once and the machine kicked in to do the knockback , 5.00 put dough into nice big tin covered it nice and loose with oiled clingfilm and left it for 20mins in warm kitchen. I had to take number 1 daughter to ballet class and new I wouldn't be back for 3 hours so put the tin into the fridge. Came home at 8 to find a nicely risen loaf, removed cling film gently, sprinkled lightly with flour and chucked it in the oven. It was delish:j

The fresh yeast can be frozen, and I have it on good authority that it will keep for up to 6 months in the freezer. You must defrost it before use so I would recommend portioning it up into 15g mini parcels ( the amount needed for approx 450g flour) so it will defrost very quickly.

Not half as much as you have made Claire!

I only make the light brown loaf and pizza dough at the minute.

I def have to try that rum and raisin but I am into making wine at the mo (well for just over a week!) for supermaket fruit juice.

It's a doddle by all accounts and only works out at about 35p per bottle of wine!
  • OK, I think mine became too big last time because I didn't read properly and put double the amount of yeast in! Whoops...it still tasted delish though.
Got a parmasan and sundried tomato loaf on now, just a packet one. Also got some fresh yeast from Asda, the guy gave me loads (about 500g I reckon)
Going to give it a go with fresh yeast tonight, but not sure I'll make enough to warrant using fresh yeast most of the time.

Ive been thinking about the hole the paddle leaves... what do you think about removing the paddle from the machine after it has finished kneading.. Do you think this would work or not?

Also how would I know it had finished kneading without going by the time I guess after watching a previous bake
