    Banana and strawberry cheesecake
    3 ½ points – serve 10 – do not freeze

    Ingredients
    100g caramel rice cakes
    4 bananas
    juice and zest of 2 lemons
    600g low fat soft cheese
    1 ½ tbsp sweeteners
    3 tbsp low fat fromage frais
    6 eggs
    500g strawberries, sliced

    Instructions
    Preheat the oven to 150’c.

    Place the rice cakes in a food processor and process until crumbly.

    Mash the banana with the lemon juice and mix in the rice cake crumbs.

    Press the mixture into a 23cm loose bottom tin.

    Blend the low fat soft cheese, sweetener and fromage frais together until smooth. Add the eggs and lemon zest and blend again and mix thoroughly.

    Pour the soft cheese mixture over the base and bake in the oven for 1-1 ½ hours until set.

    Leave to cool in the tin.

    Remove from the tin and decorate with strawberry before serving.


    Vanilla rice pudding
    3 points value – serves 4 – do not freeze

    Ingredients
    700ml soya milk
    1 vanilla pod, split and scraped
    low fat cooking spray
    150g risotto rice
    1 ½ tbsp artificial sweetener


    Instructions
    Place the milk and vanilla pod into a small saucepan and place over a medium heat.

    Spray a medium saucepan and stir in the rice. Cook over a medium heat whilst stirring, for 2-3 minutes.

    Pour a ladle of milk into the rice and, with the heat slightly higher, so the milk bubbles constantly, stir until all the milk is absorbed. Sprinkle in a little of the sweetener with every addition of milk.

    Keep repeating the process until all the milk is absorbed and you are left with a creamy vanilla rice pudding.




    Raspberry meringue frozen yogurt

    1 ½ points – serves 4 – freezable

    Ingredients
    3 egg whites
    4 ½ tbsp artificial sweetener
    150g raspberries
    450g low fat plain or raspberry yogurt

    Instructions
    Preheat oven to 170’c.

    Place the egg whites in a completely clean, grease free bowl and whisk until stiff.

    Gradually whisk in the sweetener, 1 tbsp at a time, until you have a stiff meringue mixture.

    Spoon the mixture on to a a greaseproof lined baking sheet in a circle.

    Reduce the oven temperature to 140’c and bake for 1 hour.

    Turn off the oven and leave the meringue inside until the oven has cooled (baking meringue just before you go to bed is a good idea, then it can be left in the oven overnight).

    In a large bowl break up the meringue into small pieces. Very carefully mix in the raspberries and yogurt. Spoon into a freezer proof container and freeze.

    Allow time to soften when serving – remove from the freezer about 20 minutes before.

    IIRC weight watchers is cutting back on saturated fat, the more fat in a product the higher the point. I remember I could eat jam on toast - with no butter - and stay in my daily points allowance and desserts were often marangue nests with fruit and fat free yoghurt - all high sugar, low fat
  • I've seen the thread for Slimming World, but have not seen one for Weight Watchers (apologies if I have just missed it).

    I'm starting WW again (from home by myself) tomorrow once I've been paid so can stock up on low point value snacks and goodies to see me through the days.

    I'd like to offer help to anyone working out points values etc, but would like to open this new thread asking for suggestions for some low value snacks to get me going. I tend to end up eating the same day in day out so open to ideas.

    Usual lunch time snacks for me are:

    2x Findus crispy pancakes = 3pts or
    2x crackerbread with pate or tuna = 2pts or
    low fat soups = average 2 pts or
    save up points so just eat raw carrots, celery, bowl of salad = 0pts

    Look forward to some more suggestions!

  • Hi there! Great to see a WW thread at last!

    I only joined on Weds so this is only my second day on it - I paid for the monthly pass - not only to get cheaper classes - how moneysaving is that!! but to get access to all the online gumph which is really good.

    Cant help with snacks yet as I am just getting to grips with it - but thanks for starting this thread!

  • Hello Ladies!

    I'm sorry to say this is my 2nd time round doing WW! :o 1st was after I had my dd (2 1/2) where I lost a staggering amount and was very happy, then of course, as I had lost so much I thought I was able to pig out for a bit..... 1 1/2 stone later....:eek: i'm back on it agin. But at least once I have been at it a few days i'm in auto pilot for weighing food out and counting points. My down fall is wine, as it gives me the munchines!!

    My OH and I would like to try for another baby in a few months time so i'm trying to lose as much as I can before I put it all back on in pregnancy again!

    I have done soooo many diets over the years (always lost big amounts and put it straight back on) I actually gave up dieting 7 years ago and last Weds was the first time I weighed myself at class in all that time. If I go by the scales I have a huge amount to lose but I only want to lose enough for myself to feel comfortable in my clothes (and also I am needing a gynea op so losing will help my recovery)
    I chose WW because I need portion control - did Slimming World - lost 4 stone but ended up putting back on over 5 stone! I like the idea that you can have anything you want as long as you count the points (I couldnt do the Core diet)

    So far - 3 days in and I am doing ok - really need to go shopping though!

    i signed up but after a week (about a month ago and i signed up for 3) i gave up. i just cant stay motivated.
  • Well - after saying I couldnt do the core diet I am seriously thinking about changing next week and trying it - I seem to spend a lot of my time at the moment either thinking about food or being really hungry! Will try and make some no point soups as I went shopping this afternoon....

    I've started WW a few times and a couple of years ago I did really well. I've kept some of the weight off, but not all of it of course. Although I'm not going to go back to a class at the moment (can't afford £5 a week right now), I've got all my books from when I last went and I plan to start counting my points again tomorrow. I have a wedding to go to at the beginning of June and I'd like to lose as much as I can before then and then to continue on with WW thereafter.

    I find the no point soups really useful as snacks, also the usual raw carrots etc.
