Heat up the grill. Gently fry off some garlic and leeks/ onions in oil/butter. Add some leftover cooked potato and some chopped-up Brie to the pan and heat through. Pour in some seasoned beaten eggs . When set on the bottom, put the pan under a hot grill and watch the top puff up and lightly brown. Don't overcook!
I usually use cubed potato but this time put in small dabs of leftover mash and the result was divine! Perfect comfort food!!

I like fried breaded brie with redcurrant jelly. I made some at the weekend and froze some.

Just cut the brie into chunks, dip in egg and breadcrumbs and lightly fry for a few minutes until golden.

Eat straight away, or let it cool down and freeze it.

Or make brie and cranberry toasties for lunch? Nice with some home-made coleslaw and a bit of side salad
