Or freeze it until you have a recipe you do want to use, I successfully freeze woopsied cheeses, and the higher fat content the more successful.
And over-ripe brie is Lurvly IMHO, I would take the use by date with a pinch of the proverbial.0 -

Just found 2 packs in the fridge ...
DH did buy them to use on sandwiches but for the next 2 weeks everything will be tight moneywise so I am rather reluctant to let him use them just for sandwiches when they could go into a main meal, but I have absolutely no idea what I could do with them, I have done a search and cannot find anything so just wondering if any of you wonderful people could give me ideas.

You could have brie (and grape) sandwiches with soup for your main meal

A really nice lunch or light meal which I enjoy with brie, is some nice granary or wholemael bread, toasted under the grill, then topped with some nice sliced tomatoes and grilled for a minute or two, then the sliced brie over the top sprinkled with black pepper and grilled until slightly melted, served with a large mixed salad or grilled veg, like courgettes, red onion, peppers and garlic. stuff chicken breast with it, and wrap them in bacon. oven roast for 20 mins and serve with veg. It could also be melted into a pasta dish perhaps.
