stuff chicken breast with it, and wrap them in bacon. oven roast for 20 mins and serve with veg. It could also be melted into a pasta dish perhaps.

Thanks Jexygirl, I have actually got a stuffed chicken breast on my menu plan for next week, so will use some brie instead of Philadelphia cheese .. x

So that is 1 quiche, 3 stuffed chicken breasts and 1 lunch...
That is much better than wasting them on plain boring sandwiches....

I pushed the boat out and bought a nice lump of very nice brie at weekend, but there's quite a lot left and it's oozed and doesn't look nice (tho tastes delicious - not yet gone all ammoniaey) OH won't touch it as it is - any ideas for using it up ?0

There's a cafe in Cardiff that does a brie, caramelised onion and pear toasted panini. It's absolutely gorgeous! I would never have thought of putting sliced pear in a sandwich with brie, but it really does work.0

If you've got any home-made damson jam or chutney, it goes well with that too. Wrap a piece of the brie in foil and pop in the oven til warm and oozing, serve spread on chunks of crusty bread with the damson jam.0

Brie and sour apple scones.
225g SR flour,plus extra for rolling/dusting
85g Brie
pinch of salt
55g diced butter
1 small grated cooking apple
3 tbsp buttermilk
Preheat oven to 190c.Dust a baking sheet with flour.
Freeze Brie for 10 minutes,then grate coarsely and set aside.
Make the scones:sift flour and salt,then rub in butter,til mixture resemlbes breadcrumbs.Stir in grated apple and Brie.
Mix in buttermilk using a knife to form a soft dough.Turn mix onto floured surface and flatten slightly with palm of hand.
Stamp out 4 rounds.Dust with flour and transfer to floured baking sheet.
Bake on top shelf for 10-12 minutes.
This is a recipe from 'Leith's Vegetarian Bible' which has a hot buttered radish topping that I have never made.
