I love Brie ... it makes the most fab cheese on toast and I put a little chutney with mine too:j

My favourite sandwich is brie or other soft blue cheese with sliced avocado and possibly some crunchy lettuce. If you leave the stone in the avocado and cover it closely with cling film then you can store it in the fridge and not use it all at once. Why not have a treaty sandwich just for you if the family won't eat it?

I confess I love ham and brie sandwiches, their flavours compliment each other wonderfully....
Another way is cook pasta, fry some onions and peppers in olive oil. when cooked mix together them add the brie (broken in to small pieces) so it melts into the pasta. lovelyMSE is a religion and the Arms is its Temple:money:

It's not a recipe but whenever we have leftover brie, DH loves it in a panini with ham and tomato (if we have any in) which I toast until the cheese is beginning to melt. Although he doesn't often have leftover brie, the whole chunk usually gets polished off in one go! :rotfl:0 -
Brie in a baguette with avocado and crispy bacon, and some cranberry sauce if liked.
Cut into equal sized bits, coat in beaten egg and cover in breadcrumbs or polenta. Bake on tray fro about 10-15 mins and serve with cranberry sauce0 -

It's lovely deep fried. Toss in flour, dip in beaten egg, coat in breadcrumbs, and deep fry at about 180º just for a couple of minutes till the crumbs are nicely browned and crispy. Yes it's unhealthy, but cheese isn't exactly low fat to begin with :rotfl:
It goes really well with a bit of rocket and some redcurrant jelly, if you happen to have any. You could heat up a little bit in a saucepan with a splash of sherry and serve it as a sauce. Or as dizzydux said it's great with cranberry too.0
