Brie. need some recipe ideas

    fantastic!! just the kind of thing i was looking for. i brought a round of brie for christmas an have some left and not a lot of anything else. trying to use up everything before i do shop! guess what i will be making tomorrow lol

    make a pocket in chicken breasts, spread fresh ginger (lazy stuff works well) and mango chutney. on top of chicken add more of the mango chutney and cook in a foil parcel until done and just before it is ready open up parcel and top with sliced brie, stick back in oven until brie is all melty. Serve with buttery mash or rice. DIVINE.

    I've just had two weeks of non stop visitors including school friends of my daughter, friends from work and relatives. Food figured pretty heavily in the equation, and despite people bringing more food than we knew what to do with, everyone departed well fed and I was able to re-use most of the leftovers to make things like bread and butter pudding, smoothies, cake, pizza, apple crumble, cheese sauce etc. etc.

    Nearly everyone bought brie for the cheeseboard and then never ate it. Consequently I now have 3 of the things and none of my family will touch it. They are all sick of cheese sauce and I've tried without success to hide it in sandwiches. I can't freeze it or grate it for pizza and as most of my friends are on holiday I can't give it away. I also have some Bavarian smoked cheese which looks a bit like Edam but with brown wax and smells rather strong.

    Any ideas for recipes?

    Brie is nice in quiche - particularly with leeks - it is also nice layered in a veggie lasagne with onions/ leeks and then a tomato sauce on top.

    Edited to say: when you slice it, if you cut off the rind, the family might not notice as much

    Brie with cranbery jelly is lovely.:j M & S do a sandwich with brie, cranberry, salad and grapes. Maybe try this?

    I have used it in soup before now, it goes well with a bit of stilton in stilton and brocoli soup

    Oooh. I'm brimming with ideas now! Thank you all :beer:

    I'm going to try a brie and bacon quiche for starters, as I've discovered eggs and bacon in the fridge, and I've got an onion somewhere.

    Next I'll go for the brie and cranberry sandwich as I've also got loads of grapes.

    Melting it inside pastry sounds lovely - I've also got some pitta pockets, so maybe I could give that a try?

    Still dunno about that Bavarian smoked cheese. Maybe I could do the soup with that? It would be a good way to use the Stilton, as well. Plus I could use left over veggies from the Sunday roast!

    Just used up some leftover brie to stuff a pork tenderloin with. Cut a pocket in the tenderloin spread it with cranberry sauce, tucked the brie inside, wrapped the whole thing in bacon rashers and roasted. We had this sliced with new potatoes, steamed carrots and chargrilled courgette, DH loved it.
