    Morning

I couldn't sleep for thinking about weighing myself. I have eaten really well and am even eating potatoes (which i don't like but can happily eat ing the form of SW wedges or chips). This is the first week for me and I have lost 9 pounds. I know alot of it is water weight but I am still pleased. I just wasn't really expecting it. I even looked through my food diary to make sure I haven't been depriving myself and I haven't. I might put a couple of my days menus on here later just to see what you guys think if thats ok.

Hope everyone has a good week and well done to everyone who has lost or sts.

Does anyone have a recipe for lamb shank? I thought there was a recipe in the Nov/Dec 08 mag but Ive browsed through this morning and cant find it so I was wondering if anyone had any ideas?

I think I made the lamb rogan josh recipe but substituted the boneless lamb shoulder for lamb shanks but if anyone has any other recipes then I would be interested to hear especially if they are easy i.e. chuck everything in a pan and sit in front of the tv while it cooks! :rotfl:
  • The lamb becomes so meltingly tender after cooking that it falls off the bone: it’s worth every minute of the preparation time.
    Serves: 4
Syns per serving: Free on Original
    Ready in about: 3 hours

    subtitle_ingredients.gif
    1 onion
    2 carrots
    4 garlic cloves
    2 celery sticks
    4 lamb shanks
    Fry Light
    400g can chopped tomatoes
198ml/7fl oz chicken stock made with Bovril
    1 tsp artificial sweetener
    1 bay leaf
    Salt and freshly ground pepper
    Finely chopped parsley
    Finely grated lemon zest

subtitle_method.gif1. Prepare the ingredients: peel and finely chop the onion, carrots and garlic and trim and chop the celery. Remove all visible fat from the lamb.
    2. Spray a heavy pan with Fry Light and place over a high heat. Add the lamb and brown on all sides. Remove from the pan and set aside. Turn the heat to medium and cook the onion, carrots, garlic and celery for 10 minutes before adding the tomatoes, stock, sweetener and bay leaf. Season well.
    3. Return the shanks to the pan, cover tightly and reduce the heat to low. Cook for 2 ½ hours, stirring occasionally until the meat is meltingly tender. Remove from the heat and allow to rest for 10 minutes before serving garnished with parsley and finely grated lemon zest.
