Here ya go ...Margherita Potato based pizza
Ready in 1 hour PLUS overnight chilling
BASE:
6 large potatoes
6 spring onions ( I used mixed herbs)
2 eggs
Salt + fresh ground pepper
Fry Light
FOR THE TOPPING:
2 garlic cloves
1 Onion
14oz/397g Cherry Tomatoes (I used tin tomatoes)
A handful of fresh basil leaves (again used herbs)
1 tsp artificial sweetner
6oz/170g mozzarella cheese
1 – Peel and dice the potatoes, boil until tender, drain, return to pan and mash. Set aside to cool a little. Meanwhile finely chop the spring onions. Place the mashed potatoes, spring onions and one egg in a bowl and season well. Using your fingers, mix well and shape into a ball. Cover the bowl and chill overnight to allow the mixture to firm up.
2- Prepare the topping: Crush the garlic; finely chop the onion; remove the skins from the tomatoes and chop most of the basic leaves. Place in a pan with the sweetener and bring to boil. Reduce the heat and simmer for 15-20 minutes, stirring often until thickened. Season well and remove from the heat. (The sauce can be made up to a day in advance and chilled until needed)
3 - Preheat the oven to 200c/400f/Gas Mark 6. Line a baking sheet with baking parchment. Place the potato mixture in the centre and, using your hands, pat into a 10in/25cm “pizza base”. Beat the remaining egg and brush over the base, spray with fry light and bake for 10-15 minutes, or until lightly browned.
4 - Spread the topping mixture over the base. Slice the mozzarella and arrange on op. Return the pizza to the oven for a further 6-8 minutes, or until the cheese has melted. Remove from the oven, scatter over the remaining basil, cut into wedges and serve.0 -
I keep meaning to make the mash-base pizza. I think the recipe was in a mag a couple of months ago. Let us know how it goes Louise!
I am having a chinese with friends tonight. It's a green day so I can have plenty of boiled rice. What main course would do least damage do you think???0 -
Oh...and another question (sorry!)
How do you count sushi? I like those little boxes you get from the supermarket - on green, is the rice free and then the little slice of prawn on top is a HE? There was just veg inside the other rolls.0 -

Cocoa powder is 1 syn per heaped teaspoon so, depending on the way you like it (weak or strong) I find that Options is actually less syn-ful and so much tastier than plain cocoa....I like the Fudge flavour and the Turkish Delight one, yum!!!I let my mind wander and it never came back!0 -

Reddeb and peachyest, cheers for the cheers! It was waaaaay back on page 282 tho, in case you were puzzled! I only get on the pooter when it decides to let me, its very temperamental- worse than my hubby lol!

hi, hope no-one minds me posting, im hoping to join slimming world tomorrow, the group is a morning one, do you think anyone will mind if i take ds with me? hes 22 months and i have no-one to have him.

I used to take my ds with me to a morning group and no one minded. I would say take some snacks and a drink with you. And maybe something he can play with in the pram. I never took my ds out because he would have legged it lol!Back on slimming world after my second baby!!Lost 2 st 12 lbs after my first!Weight loss to date - 1 st0 -

I'm making Shepherds pie tonight, I use lamb mince for the base (cant stand Quorn mince!!) and then top it with mashed swede & carrot, sprinkle sliced leeks over the top and sprinkle a little cheddar over the top. My hubby (who isn't doing SW and doesn't need to) has declared it better than potato-topped Shepherds pie!

asda's sushi is 1/2 syn for 60-80g and 1 syn for the bigger packs on a green day
