    Haha! Thanks made me chuckle!! well in the case of the butternut squash being free, i am going to submit my first recipe to you all! (stolen from the Morrisons magazine and modified slightly!!)

    Serves 4-6, Prep 15, Cook 45

    Will need:

    400g butternut squash
    1 small onion cut into thin wedges
    1/4 teaspoon smoked paprika
    80g clover (will need to be synned but surely you can use fry light instead to make it free!)
    100g baby leaf spinach
    50g feta cheese (42g is Healthy A so might be worth synning it and having something else as A choice!) after all it does serve 4-6 so syns will be minimal
    4 large eggs
    salt & fresh ground pepper

    1. pre-heat oven to 180c, fan 170 gas 4. Peel butternut squash, discard seeds and cut into 2.5cm discs!

    2. Brush a large baking tray with half the clover (frylight) and add diced butternut, red onion, smoked paprika and season well. Roast for 25 mins until caramelised, turning occasionally. Leave to cool slightly. Leave oven on.

    3. Heat the remaining Clover in a non-stick frying pan measuring 21cm on the base and 6cm deep. Add the baby leaf spinach to the pan and heat until wilted down, about 1 minute. Add the roasted butternut and onions - mix everything lightly. Whisk the eggs with seasoning and pour the vegetables. Crumble over the feta.

    4. Cook the fritatta over a medium heat for 5 minutes, then place in the oven for 15 minutes until its golden brown on top. Remove from oven and let rest for 5 minutes before slicing into large wedges with dressed salad leaves!

    Just back from WI and I've lost another 3lb. Sooooo delighted. I can't believe how quickly it's coming off! 11.gif

    I decided to have a glass of wine with dinner last night - hadn't had any for a few weeks, being very good - took one sip, decided I didn't like it, and had diet tonic water instead!:rotfl: :rotfl:

    I got diet Tonic with a hint of Cranberry from Morrisons last week, it's delish!

  • ooh i forgot to mention! a guy at work told me about these spice packets you can get. so if you are really into curry then these are for you! the pack also contains a recipe which can be modified for SW (i.e. low fat yog and frylight instead of oil. They have a website and stockists around the country so give them a whirl (plus they are dirt cheap, about £1.99!) will be trying the chicken korma this week so will keep you updated!

    While on the subject of curry - someone told me that in the SW magazine at the beginning of the year was a recipe for Chicken Jalfrezi, that was before I joined so if anyone still has the magazine and can let me have the recipe I'll be their friend for life!!! :rotfl: :rotfl:
