How about mackrel, spring onion and mayo (dash of lemon juice) sandwich/jacket potato filling - it's yum!

I like them as a side vegetable

trimmed, tossed in oil then griddled or Foreman-ed till slightly charred & soft, lovely

Thanks for all the brilliant suggestions :T - I'm almost wishing I had bought more so I could try them all.

    Keep the ideas coming ...

yes freeze them - but they wont be suitable for salads. however, spring onions are lovely griddled or can be added to stir fries, curries, casseroles or even mash!
  • We had a big fry up last week and hubby peeled loads of them and bunged them in the pan with the pork chops - gorgeous!
We still have a box full of them so would welcome any more ideas.

I have a load of them just now as well and am literally chopping a whole bunch at a time and chucking them in the pan with whatever I happen to be cooking. So, for example, a pile of whoopsied mushrooms, chopped, into pan with crushed garlic and a pile of scallions, dry fried then added to pasta with a wee bit of parmesan on top.
