    Not sure but I do love a toasted cheese and spring onion sandwich! Or you could pickle them?

    You could always add some to grated cheese and a mayo for sandwich filler or a jacket spud filling, when i've had a glut i've often used them in place of onions for quiche & onion and garlic dip

    If you like kimchi, Hungry Tigress' recipe for ramps green kimchi works very well with the green part of the spring onions.

    For the whites, I'd make cucumber and spring onion soup or spring onion and potato soup (but then I'm predictable).

    50g butter or 3tbsp cooking oil
    1 large onion, peeled and chopped finely
    300g spring onions whites, peeled and chopped finely
    500g potato, peeled and diced
    1litre to 1200ml stock (vegetable or chicken)
    Seasoning to taste (salt, white pepper)

    Cook onions in the butter/oil for 10-15 mins until they are soft but not coloured. Add remaining ingredients & simmer until potato is cooked.

    Blend to your preferred level of smoothness. Adjust seasoning to taste (with white pepper if you're going to keep the colour light).

    To serve

    If you have a very pale sherry, then a tbsp of sherry works well with this soup without turning the colour to mud.

    Offer baked garlic puree with creme fraiche/cream/lemon juice if available although the soup is satisfying without them. Or, rub garlic puree on toast and serve on the side.

    You can freeze them and bag them to use later. I do this all the time and it works really well. I open freeze them- chop and freeze on a baking tray or two in the freezer then pour them into a tub or a bag. Voila, spring onions when you need them :)

    I love spring onions and never seem to grow enough :( what a bargain!
    I'd chop and freeze any spares too and wanted to add my thanks for the cuke and sp.onion soup recipe I'm drowning in cucumbers and sick of pickling :rotfl:
  • Good old Irish Champ (potatoes and spring onions). It's delicious. If you type it in to google you'll get many recipes. It's mostly spring onion heated in milk which is then added to potatoes.
    You can then fry any leftovers to make a potato cake thing.

    Can't improve on any of the suggestions - just wanted to say what a brilliant bargain! I'm a spring onion fan but only buy them now and again as they can be quite expensive - 25 bunches or 20p is fab! :j
